    Apple Pancake
    Ingredients:
    ½ cup (1 stick) unsalted butter
    ½ cup milk
    2 apples, peeled or not (your preference), and thinly sliced
    3 tablespoons of sugar
    1 teaspoon of cinnamon
    2 large eggs
    ½ cup all purpose flour
    2 pinches of salt
    Preheat the oven to 450 F and melt butter over low heat in an 8 inch cast iron skillet.
    While the butter melts, put the milk into a large measuring cup.
    In a small to medium bowl, toss the apple slices with the cinnamon and sugar until well coated.
    Pour half the melted butter into the milk and whisk.
    Add the apples to the hot buttered skillet. Cook the apples over medium low to low heat, stirring every so often. Once they get nicely browned and bubbly remove from the heat.
    Add the egg to the milk mixture and whisk. Add flour and salt to the measuring cup as well and whisk until smooth. Pour the batter over the apples covering them.
    Bake until the pancake puffs up and gets a golden top, with patches of brown, about 10 minutes..
