Yay I love this challenge! There are quite a few Icelandic crime writers, if that's what you want to try. One book was just released, it's called Reykjavik. For African countries, I would highly recommend Homegoing for Ghana! Yaa Gyasi was born there. I've got quite a few on my wishlist so I'll have a scroll through and come back if I find any suitable ones 😊
This is such a great challenge! I have a few recommendations from books I've recently read: Poland: Drive Your Plow Over the Bones of the Dead by Olga Tokarczuk. I read this last year and enjoyed it a great deal. It's a kind of literary mystery, a fusion of genres, with a highly unusual and eccentric protagonist. I thought it was a very distinctive, memorable book.
Dominica: Wide Sargasso Sea by Jean Rhys. This one might be cheating slightly, because Rhys is classed as a British writer, but she was born and raised in Dominica (I just googled Dominica writers and Jean Rhys was the first name on the list, so I think she counts!) And unfortunately this wouldn't fill in much of your map, as Dominica is just a tiny dot on the world map! But it is a great book - I recently reread it: it's such a short book, but I find it so powerful. (If you're not familiar with it, it's written as a prequel to Jane Eyre, so I wouldn't recommend it if you haven't read Jane Eyre.) Holland: Michel Faber. Faber has lived in Scotland for decades but he's originally from the Netherlands. His two most well known books are Under the Skin and The Crimson Petal and the White - both great. I've recently reread a novella by him, The Hundred and Ninety-nine Steps, and I loved it. It's a very subtle story that some might find uneventful, but I thought it was rich with meaning and resonance. I think he's a very talented and empathetic writer.
You've been making good progress with this challenge! And it was nice to have a check in. And great that you have quite a few countries checked off already. And fun that you're ticking them off and keeping things tracked with the map. South America - I recommend Hour of the Star by Clarice Lispector, and Paula by Isabel Allende. If you need India I would recommend the home and the world by Tagore. Oh, and also maybe her body and other parties by carmen maria machado would tick something off? I know Rootless is partially set in Ghana and Caleb Azumah Nelson's latest has Ghanaian set sections. I think Yaa Gysai also counts for Ghana too.
