With a 1000 seat restaurant, servers ringing in their entire sections all at once and hostesses just waving everyone through the door non-stop, the printer would start at 11am and wouldn't stop for 9 hours, spitting out a new table's orders every 3 seconds. Sometimes I look at the Chef and can tell he hears that fukin noise in his sleep. I can see the stress on his face. He vents to me and I can feel myself tense up. It's hilarious because I just put my head down and push out my work that much faster. Then I tell a few jokes and go home to my wife. We go out to dinner every night being empty nesters. It’s so so interesting because I’m always on the fence with Marcus’s behaviour in this scene. On the one hand - his whole character arc has basically revolved around this donut and us as viewers are happy to see him have perfected it. On the other hand, the kitchen is falling apart and everyone needed at that moment to pull together to fulfil their jobs. Marcus could probably tell from the angry screams how much stress Carmy was under - and from how annoyed Syd was when he hadn’t even attempted to start cutting the cakes, which, let’s face it - is what he’s getting paid to do. So whilst I agree it was nasty of Carmy to throw his donut on the floor, I completely understand why he did it. You’re under extreme stress and someone presents you with something you just don’t need in that moment. Ultimately, I don’t think Marcus was as justified storming out as Sydney because at least Sydney was doing (or attempting to do) her job.

The last thing a busy chef needs is a line cook who can't keep up with orders because he fancies himself as an innovator." Line cooks are meant to replicate the chef's dish over and over again with consistency. Marcus by all means is a great guy and as the comment above we're all happy for his triumph with the donuts, but the tickets musts come first and foremost. He really should not even be thinking about those donuts while on the line. and regarding the promoting of the donuts, while a good idea realistically that would never slide in a busy kitchen to just change everything last second unless you were doing a tasting menu

  • @jonahvanzandt1629
    @jonahvanzandt1629 Před rokem +179

    Remember people, this whole show delves into the minds of our characters, showing the juxtaposition between action and thought. Carmy wanted a kitchen full of order and respect, but cracked under the pressure and let his anger lash out. Sydney was skilled and a natural leader, but let her vanity blind her. Alot of this episodes problems started with her mistakes. She didn't listen to her boss and these are the consequences. Marcus was a baking genius and was on the cusp of a breakthrough, but let his success narrow his focus. In the end, he couldn't see the chaos he played a part in by not doing his job. I could go on but the point is we've learned how these characters think, and in the heat of the moment, flaws tend to become prominent. And sometimes, that's what it means to be human.

      It’s also human to apologize and grow. I had a lot of respect for Carmy when he stepped up to say he was sorry to Marcus and Sydney (even when he was still dealing and juggling all the other stuff he was going through). I would’ve liked to have seen Sydney and Marcus reciprocate though. What they did and how they reacted in this episode was human and reasonable. But from a third party viewer standpoint, Carmy should not have been the only person to apologize. Sydney was the reason they had so many pre-orders to deal with and Marcus was too fixated on donuts to clue in that his boss was already more than absolutely beyond stressed. Playing the victim didn’t have a terrible long term consequence but as you can see from the comments, people remember

    • @JimmySailor
      @JimmySailor Před 6 měsíci +7

      Sydney created a bunch of problems then dumped them on her team when she couldn’t handle it. She’s not a line cook, she’s supposed to be Carmy’s 2nd in command. She’s the one who’s supposed to manage Marcus. She’s the one who’s supposed to keep the kitchen in order. She was a complete and utter failure of a chef in this episode and if I was Carmy I’d never allow her back in my kitchen.
      The very very very least she could have done was to stay the rest of her shift. Sydney’s shown herself to be incapable of managing people at every step of the way though.

      I think her contribution was unintentional though. She had no idea giving that food out would cause the ripple effect that it did. And under normal circumstances, the influx in orders would’ve been a good thing. It was just the culmination of everything happening at once that made it too much. And she did try to take responsibility with the to gos but Carmy pushed her off the line. Now it was on her for pushing for to go’s before Carmy was ready in the first place, but he pushed her into seemingly uncomfortable situations before she was ready and that ended up working out well for the kitchen. And it still doesn’t excuse his verbal abuse, especially after she’d told him she couldn’t work in an environment that toxic. Neither of them really apologized to the other. Carmy acknowledged his behavior was out of line but never actually said “I’m sorry” even tho they seemed to make amends by the end, thank God. It’s really obvious they have very strong chemistry.

      The thing that I LOVED about this is how layered this episode was. I think her taking responsibly for her mistake was her *immediately* buckling down and getting to work to fix it. She didn't explicitly apologize, but none of them ever really do. Do they? The crew's apologies and amends always come from acts of service more than verbal reconciliation (Richie firing a gun to protect Carmy after a fight, Sydney getting the right tools for Richie at the hardware store, Tina squashing her beef with Sydney thru a bowl of cut vegetable, etc.) Them finding themselves up a creek with a hundred orders was 100% Sydney's fault, but the mood of chaos, anger, and shambles the kitchen devolved into was 1000% on Carmy. We've seen episode after episode of them dealing with the same, if not worse levels of unpreparedness. And Carmy always kept as level head as he could and the crew followed his lead, getting through the ordeal. But here he loses his cool, and more importantly he devolves into a lesser boss right off the bat-- not listening, cursing them out, not paying attention to who his assigning where which leads to unproductive clashes (and stabbings 😂). And the kitchen didn't stand a chance of successfully completing the orders because of it.

    • @jaydubs6354

      Facts. Her being so ambitious ended up causing this mistake with the pre order system. I was a big fan of her up until this episode. Her inability to see how she was apart of the negativity in the restaurant like all the other workers there was a bit surprising to me and it kinda rubbed me the wrong way. The whole season she was played off as a bit “holier than thou” but she put in a ton of effort and was one of the few employees who bought into Carmen’s new ideas early on. When she fucked up she couldn’t handle the heat and bailed leaving them on their own. It just didn’t seem like her character to do that. If she were in a nicer kitchen she’d have been smacked back to reality many times by then but because of the environment there she was a comfortable sous chef and began to think she was the know it all because she could boss around 6 people who have held the same job with hardly any standards or expectations for over a decade

    I’m still a Sydney fan, I like all of the characters on this show. Nobody is one-dimensional. Sydney like all of them, has flaws, but you can tell she cares and admires them all, especially Carmen. The scene in the car with Richie, where she said, they can “learn from” him, shows that she’s not someone I can just abandon, she knows that he has a lot of experience. Her sitting on the chair wideyed, really looked like she was going through it internally and actually laughing at how fucked everything was going... As if to say, “This is so messed up, it’s hilariously bad.” & she just couldn’t deal with how Carmy yelled at her. I mean everyone is saying she’s unprofessional and I think she’s just inexperienced...I mean he’s the Michelin star, prodigy, and even he is reeling from trauma with how that abusive chef spoke to him; the difference is Carmy actually feels remorse and will not do anything in the name of making
    good food. I love this show, I cannot wait for season 2!☺️

      Strong agree. Anyone who's worked in a kitchen that can look me in the eye and say with all sincerity that they've never had a bad service, is full of $#!+. While I don't appreciate how she handled this particular meltdown, nor do I think she's justified in any way; I believe wholeheartedly that her passion for cooking, and her desire to constantly find ways to improve, elevate, and be creative is a better barometer for her character as a, well, character, than this moment itself. And Carmy clearly feels the same way, as he was quick to own up to his behavior and welcome her back, despite this one instance.
      I think this scene was meant to evoke something within every kitchen staff who's watched this show - because we've all had someone quit on the fly and take zero ownership of their mistakes. But the point is that, it's all love, and we're a family, no matter how badly we fk up a service.

      Everyone is saying she's unprofessional because they've been gaslit all their lives into thinking bosses are entitled to ruin their reports' lives. Workers are humans and deserve to be treated as such. Bosses are called on lead their reports in fair and foul weather, and in S1, Carmen isn't equipped for the latter. All it would have taken to preserve his headcount was just putting his massive ego aside for two minutes. Telling Marcus to focus on his orders and they'd talk about his donut later and disciplining Sydney in private after the rush was over.
      I mean obviously we need that arc and he comes a long way in S2, but irl he's unlikely to have been so lucky to retain them. And as empathetic as I am to people dealing with GAD (my mom) , bipolar (my sister) , etc, in all environments an individual deserves to set boundaries including at work , where you're selling your labour to someone who needs it.

    If you’ve ever worked in a real kitchen, it’s always this stressful if you can’t handle it then it is definitely not for you. These type of places give people thick skin because it’s so stressful, that nothing else seems to matter. Not leaving. Not even cleaning. They only worry about getting food out as fast as possible. When I was 15 I got a restaurant job and I was a dishwasher and it was probably the worst mistake. Usually you’re not supposed to have a job until you’re 16 but they took a chance on me. And it was my first job too. It opened my eyes to how people treat others in tense situation when their business is on the line

    Everyone in this scene is wrong in their own way, Syd got too ambitious and refused to listen when Carmy told her the place wasn’t ready for to go, Marcus completely neglected his duties to the kitchen in favor of his donut and threatened to put them further behind the 8 ball, and Carmy who’s been desiring to make the Beef different than the places him and Syd worked before let his trauma and anger get the best of him and he reverted to the abusive techniques he was taught under, and that’s what makes it so stressful and fun to watch😅

    In my opinion both Sydney and Marcus were in the wrong in this episode, but i think it was meant to speak to the strength of character of Carm that he was able to fall back and still apologize to them. He really didn't have to, but he still did. It seperates him from the Chef Joel Mchale played, where he could care less about his staff.

      The more I think about it, the more it feels align with a case of gaslighting. Sure he is the chef, their boss and held to a higher standard but as a third party viewer who gets to process the events unfold from a detached pov, you can’t help but think Carmy did more than his fair share yet Marcus and Sydney never even acknowledged the consequences of their actions that led/contributed to this mess

    All the comments acting like Sydney was in the wrong and that Camry was right missed the point of this entire episode soooo much. Leaving the preorder option on was a very simple mistake and there was no reason for Carmy to throw a tantrum like a child over it. Carmy tasting the donut at the end and realising it was actually good was the moment he realised that he fucked up and had just pushed away all the people that cared about making his dream of this restaurant come true. People acting like Carmy was justified clearly have no clue about abusive behaviour.

    i honestly think sydney is one of the greatest characters of the show and once you truly understand her character, you are able to understand why she chose to quit here. While it is true that she did indeed serve a dish that wasn’t on the menu, she didn’t know who that guy was and she did it not to throw away the food. And i completely understand why she stood out, i think that once you understand the psychology of her character, you can understand how everything she did, she did to help the restaurant, and even accepting the job was her risking hours of her life for something that could be a huge disaster. Even though, yes, the whole delivery chaos was her fault, nobody truly acknowledged her talents and how hard she was working to benefit the restaurant and bring more people in. I believe that at this point, sydney was just tired of being constantly under minded, mistreated and overlooked when she was just working hard to make the restaurant a better place(even if that isn’t her job), in my opinion once you get that you are able to truly understand why she did what she did
