Chao Goi Ga - Vietnamese Food Recipe

  • Cháo gỏi gà - Vietnamese chicken porridge/congee is easy to make and well loved by we Vietnamese people. While there are many ways to make this chicken porridge soup, I particularly love this recipe. The chicken stock from this recipe is versatile, and can also be used as a base for chicken pho also.
    After shredding the meat out for the porridge, the real prize is not the meat, but really the bones and chicken carcass. Using that, we make gỏi gà; a Vietnamese salad that is a bit citrus, sweet, spicy, and full of onions and coriander flavor.
    The goi ga is good for those that are drinking and munching (nhau). After drinking and munching on the chicken bones, they can enjoy the chao ga, chicken porridge soup. It is good to end the night and cure hangover the next day!

    Never heard cooking with lemon grass and kaffir lime. Looks more like Thai style too. I will have to try your version! Looks great! My mom adds shredded cabbage to the shredded chicken onion mixture as a side salad.

    I really miss my mama’s chicken chao ga so much…
    I am sick now and I remember her always making me this with some goi ga on the side…
    She just passed away 2 months ago and I miss her cooking and caring for me so much 😢😢

      Chicken thighs, drumstick. and wings is great! I used the whole free range chicken because of the firm meat texture. But whatever is easier :)

    Interesting take on chao...I've seen pho ga made with lime leaves, so that doesn't exactly surprise me, but the lemongrass did. Kinda like the base for khao poon, minus a few ingredients. I like it! Is this how your family made it or you just decided to chef it up with the lemongrass and kaffir lime leaves?

      This is how we make it. Normally we pair chicken With lemongrass and duck with ginger. Even when I make chicken pho… I use lemongrass to stuff it. Lemongrass goes well with everything 😊

      @@ChefQsTravelRecipe Yeah, I agree, lemongrass levels it up, which is why I'm surprised it wasn't used initially for chao ga and pho. I'm sure there's a reason, but since lemongrass is delish, why not? Maybe to keep dishes more distinct instead of adding the same aromatics to everything?

      Hey Shawn! Sorry about that.. in the video I used 3 chicken and made a big pot for the fam (big family). I don’t think many people will cook that many chicken 😂 I’ll update the website for the measurement for smaller servings. I’ll send you the link after the update today :)
