  • Offset Smoker: How to build the Ultimate heavy duty Stick burner BBQ
In this weeks video we will be building this off set smoker using 18" diameter 1/2" thick pipe and various other steels and materials. Using 1/2" thick pipe really helps keep your temps steady and outside temperatures or wind does not really affect it like thinner mass produced BBQs!

I'm going to build one of these, and one thing I'm going to do is put fire bricks or refractory cement on the base of the fire box. It'll keep the heat up and maintain the integrity of the box for the long haul

Excellent smoker! Especially liked the stick loading door and draft design. Personally, for my own use at home I would add a counter weight, larger wheels and a custom made water pan. But at 1/2" walls that is one excellent smoker! Thank you for sharing! Great build!

Definitely weld a counterweight to the door it will open with 1 hand... I put one on my custom reverse built smoker, cook chamber is 36"x60" with a 60"x 10 " stainless steel shelf on the front, fire box is 36" x24"x24" also made a wood basket for fire box, has a 6" diameter x 60" stack on top of draft plate has a 1/4 " thick diamond plate hog I cut out and welded, smoker is 8' foot long welded on to 5'x12' dual axle trailer. Will add a 36"x24" charcoal grill made out of a job site tool box with top door this way I could close it up, 16"x16" propane burner with stainless steel prep table. It is the complete package. I always wanted one for years so I finally built it in June 2021 love it holds temperature very well... I call it "THE BEAST" I'm American Hunter on pinterest check it out....enjoy...

Nice job on the smoker, I have a perfect counterweight for a smoker that size, they are big monster bolts like 15" long and the nut is like 2 inches thick and big, screw half way one bolt into the nut and the other end of the nut another bolt then use some 1/4" plate angled back to weld them onto, two bolts and one nut equals 32 lbs double the nuts and bolts ie 4 bolts and two nuts and you got 64 lbs not including the weight of the 1/4 plate there welded to, I used just two bolts on my lid and man what a difference, open with one finger now.

I feel like your firebox should be attached higher to create a larger inlet port to the cook chamber. That’s just based on what I’ve observed in other offsets where the inlet port is about 1/3 the area of the end cap. Great video by the way. Given me a lot of insight as I modify an Oklahoma Joe to build a bigger firebox and larger outlet stack with collector.

Nice build! Given the gauge of metal, you may not run into this issue or have near the fluctuations, but one tip I've found for winter smoking is to drape a welding blanket over the cook chamber and it really helps to maintain cooking temps without stressing the burn box nearly as much.

You might try building a reverse flow smoker. I did that with my offset stick burner and it made it MUCH better. Basically you need a plate in the bottom of the cook chamber that forces all of the smoke from the firebox to the opposite end of the smoker to even out the temp, then it flows up into the cooking chamber then back across. the flue is then on the firebox side of the smoker and the heat makes two full passes across the whole smoker. The only drawback is that its a pain to get the draft started.

    • @FabbinAdventures

Yeah, i will build more and try a reverse flow then. Im actually building a couple more smokers for some other guys right now, so maybe someone will ask me to build a reverse flow.

Very nice build….. have you had any problems with grease fires? I’ve been building these cookers for about 30 years and one of the things that I’ve learned is to add a piece of metal/baffle in the bottom of the cooking chamber about 2” from the fire box to keep the grease from falling back in to the fire book. I’m not being critical of your work because to be honest it’s freaking awesome.
