    I wrote out this recipe for anyone who may want to print it out **I highly recommend you watch the video, because I may have made a few unknown errors when writing this**
    Cream Cheese
    (recipe yields about 370 g of cream cheese)
    Ingredients
    - 8c (2 L) Whole Milk
    - 2c (450 ml) Cream
    - 6 tbsp White Vinegar
    - ½ c (120 ml) heavy cream
    - 1 tsp salt
    Directions
    - Mix your 8 cups of milk and 2 cups of cream together in a pot. Stirring constantly, bring to a rolling simmer over a medium-high heat (close to boiling).
    - Gradually add 6 tablespoons of white vinegar.
    - When the mixture separates into curd and whey, remove from the heat.
    - Let sit for 15 minutes.
    - Line a colander with a cheesecloth over a large bowl and pour the mixture.
    - Squeeze the cheesecloth to remove as much whey as possible
    - Tie off the cheesecloth top and let it continue to strain for 15 minutes
    - Mix together ½ c of heavy cream with the curd and add 1 tsp of salt (or to taste)
    - Beat until smooth and creamy
    - (If needed, add a little bit of whey, 1-2 tbs)
    - Refrigerate for at least 1 hour (the more you chill it the firmer it gets)
    - (For a thicker & richer texture, use 50% heavy cream and 50% whole milk)

      You are welcome :). Whipping cream contains 30-35% fat. Heavy cream is richer and contains at least 36% or more fat.

    I prefer the much simpler, much easier method of making scrumptious cream cheese by starting with homemade yogurt.
    Only 2 ingredients: whole milk and a small container of quality yogurt containing live cultures. Very tasty AND more nutritious than the method used in this video & you end up with 2 different products: healthy tasty easy homemade yogurt at the end of stage one AND then stage two, straining some of the yogurt, delicious homemade cream cheese... BOTH products containing live active cultures to support good gut AND general health!

      just keep 2 liter whole raw milk in a container or add 2 tsp of yogurt in it. and let it sit for 2 days... until whey separates and thick layer form on top... then take the cheese off in a muslin and further squeeze water or hang it for a while until it does... it will be creamy and sour in taste.. great for cheese cake...

      You can, cause the cream cheese bought from the store also contain a level of salt. Although it is your choice of u want to add the salt in it or not. I'd recommend a pinch

    This is a very good and working recipte for COTTAGE cheese, and it would have a sort of "not smooth/lumpy/almost gritty' texture in your mouth, certainly NOTHING like a buttery, melt-in-your-mouth texture. And the reason for that is - IT'S NOT CREAM CHEESE, BUT IT IS COTTAGE CHEESE. This is a great recipe for COTTAGE CHEESE!

    O so vinegar is the stuff you uses in cheese if you want to do cream cheese. Instead of the rennet and Mesophilic starter culture. I realize cheese supply stores sell specific cultures for cream cheese but it seems for this type of cheese its best to just uses vinegar. Let me know i see some cheese prefering to uses just vinegar as a sub for rennet and starter culture. Now it only works for a few cheese to come out right and this being one of them.

      @@Anna-jy6tq This just isn’t how cream cheese is made, I don’t know how to get that across to you. Make it, you’ll see it’s just not cream cheese. It just isn’t. There are far better recipes for cream cheese that get you much much closer. I don’t know why you keep defending this. It makes no sense to me, it’s just factually not what cream cheese is. It’s not even either of the two versions of neufchâtel, it’s literally ricotta cheese that’s been blended. You’re purposefully twisting what I’m saying. And you know that. We don’t need to own a factory to get a good cream cheese that is a decent facsimile to what is being done in the factory. There are people here that value a good cooking education and we can’t afford to get one. This video in my opinion straight up is providing misinformation. Anyone who knows how to make a better cream cheese, or farmer’s cheese, or ricotta knows this video isn’t providing what it’s title is. That’s all. Please don’t take it personally.

    It would cost over $10.00 to make $4.00 worth of cheese. That doesn't count the time.
    Unless I buy a cow, I'll keep buying Philly from Costco.

      You're negating the fact that you also get whey out of this process and can turn it into whey protein and could use whey to make various other products out of it. So, not only are you getting cream cheese but you're getting another very valuable product out of it.

    Unfortunately it's basically cottage cheese only blended. Not like cream cheese at all.
