I have several questions, can be still sushi if you introduce that fish in boiling water at least 30 seconds and let to cold, or this always has to be raw fish?. What is that fluorescent yellow cover on the sushi that appears at 3:13? and those green grains or seeds used as cover at 5:09?, and that golden seeds at 9:50, are they sesame?.

very bad sushi because probably done done by Chinese chef. Many Japanese restaurants owners are Chinese as you can see in the quality food in this video. Real Japanese restaurants have better presentation. BTW, the way this person slices the fish is completely wrong.
