    Big up and mad RESPECT to you Chef John for making your own jerk seasoning. I'm Jamaican and I use Walkerswood Jerk Seasoning and it is amazing. My husband loves my jerk wings and he can't get enough of the heat and spice. Everybody loves jerk and a Jamaican girl.

    Chef John, HUGE fan. I've literally been watching your vids everyday, over the last couple months. I'm opening a restaurant in a couple of months and your vids are great for teaching recipes, techniques and for inspiration. As far as this recipe goes, while it's not 100% authentic, it's probably the closest I've ever seen any American come to getting it right; and for that I say kudos to you sir. Truth be told, unless an avid foodie or a restauranteur, a lot of us as Jamaicans genuinely don't know what makes AUTHENTIC jerk seasoning. When i mention cinnamon and vinegar to some people, they look at me funny. There are a few things I'm gonna suggest you try to make it authentic, as well as to make it far more flavourful. Here goes:
    We don't add cumin to the marinade, scotch bonnet peppers are a must (preferred), replace the lemon with white vinegar and based on the amount of all spice you added to the mixture, try dialing back the nutmeg and cinnamon a bit. For the biggest, most authentic flavouring though...you NEED to do this on a wood fire grill, over pimento wood. Even if you don't try the other suggestions, trust me...find and invest in some pimento wood...immediately!     My wife made the Jamaican jerk 🍗 for my birthday; grilled them instead. Dinner included candied sweet potatoes and cut and seasoned green beans. In addition to 🍑 cobbler using chef Joh's recipe. The chicken marinade smelled sooo good I wish it came in an air freshener 😂😂. Oh, my birthday dinner was great. Thanks chef John for sharing your recipes.

    After 7 years this is still my go to recipe for chicken wings. This recipe is better than the jerk chicken made by Jamaican restaurants I go to.

    A huge part of the jerk style is the barbaque aspect of it. I know that you might not have access to a grill, but grilling the chicken along with some pimento wood chips makes a huge difference in taste.

    BTW: I once tried to grow Jerk Spices in the garden. They were so loutish and unruly, all the other veggies and herbs moved to the neighbor's garden. So, I buy mine, now.

    If you guys have scotch bonnet in stock grab those rather than habanero, they have a different flavour that give jerk the distinctive flavour that a lot of people outside of Jamaica cant produce. They also add a bit of red stripe if you want to marinade it overnight (which is always a great investment.)

    Omg Hi Chef John , Im a Jamaican subscriber and I just wanted to tell you that you that did an amazing job ! You did everything so right !! . ginger is missing but its not important, you got the lime , sugar, allspice and scotch bonnet so i know damn well you did your research .

      How is it perfect if it's not done over a grill? Plus if you're Jamaican you ought to know that tiny bit of herbs and spices is not gonna give that authentic Jamaican flavour. PS Keep the seeds in

    I gave this a try tonight, really hoping it didn't turn out like the americanized version of jerk (the kind of stuff u get at american food chains) that i can't stand. And i have to say i was so impressed it was so easy and so delicious! I didn't have any fresh thyme but i replaced it with fresh marjoram and it was still damn good. Thanks Chef

      I did this recipe times 4 with 12 fresh jalapeños and left out the brown sugar. Use the leftover seasonings on the sheet tray mixed with chicken stock as a sauce to put over white rice

    I tried this recipe and it's seriously amazing. We loved it! We're going to keep some membrane and seeds from the habañero for extra heat next time! We served them with beans and rice, mango salsa, and plantains. One of the best meals ever! Thanks Chef John.

    I also like this recipe because like I said before I would like chicken wing that aren't fried, but have great taste and flavor. I am going to try this also and add it to my own recipe book at home. This is also a good video thanks a lot.

    why does he marinate then flip first time and then second time reversing the order? Wouldn't that only coat one side of the wings with marinate? if that's the intention, why?

      The marinate that he painted over the first time drips to the rest of the chicken, then when he flips it over and doesn't baste, he lets the flavor soak in, then the second basting, he lets the flavor soak in more.

      phlyingpigs That just doesn't make sense to me. maybe it's because I'm from New Orleans. We're big on seasoning both sides. I don't doubt for a second this is delicious. I just don't understand why you wouldn't sauce both sides.
