I'll admit I was doubtful, but you nailed this. All the right ingredients were used. Just perfect John. I have a lot of Jamaican friends and they too were equally impressed. One love from Toronto!
Big up and mad RESPECT to you Chef John for making your own jerk seasoning. I'm Jamaican and I use Walkerswood Jerk Seasoning and it is amazing. My husband loves my jerk wings and he can't get enough of the heat and spice. Everybody loves jerk and a Jamaican girl.
Wendy Alexander-DeKruger girl yeeeeeeessss jamican girls rock and jerk chicken be fire as well my daddy make it all the time
I recently used Walkerswood Jerk seasoning and it was pretty good indeed.
Wendy Alexander-DeKruger where can I find this seasoning?

Chef John, HUGE fan. I've literally been watching your vids everyday, over the last couple months. I'm opening a restaurant in a couple of months and your vids are great for teaching recipes, techniques and for inspiration. As far as this recipe goes, while it's not 100% authentic, it's probably the closest I've ever seen any American come to getting it right; and for that I say kudos to you sir. Truth be told, unless an avid foodie or a restauranteur, a lot of us as Jamaicans genuinely don't know what makes AUTHENTIC jerk seasoning. When i mention cinnamon and vinegar to some people, they look at me funny. There are a few things I'm gonna suggest you try to make it authentic, as well as to make it far more flavourful. Here goes:
We don't add cumin to the marinade, scotch bonnet peppers are a must (preferred), replace the lemon with white vinegar and based on the amount of all spice you added to the mixture, try dialing back the nutmeg and cinnamon a bit. For the biggest, most authentic flavouring though...you NEED to do this on a wood fire grill, over pimento wood. Even if you don't try the other suggestions, trust me...find and invest in some pimento wood...immediately! All the best and thank you a bunch for the time and effort you take to give us these videos
Andre Sewell Hi, did you open your restaurant and how is it going?
would like to know too
How's the restaurant going, Andre? We all want to know!
ANDRE!! Tell me you’re still alive.

Touching habanero with your bare hands... the gift that keeps on giving :)
Def don't touch your eye or your no-no place.
It’s called not being a pussy and having the brains not to touch your face or dick afterwards and washing your hands. Gloves are completely unnecessary
jared vincent this man right here has never cut more than a handful of hot peppers.
My wife made the Jamaican jerk 🍗 for my birthday; grilled them instead. Dinner included candied sweet potatoes and cut and seasoned green beans. In addition to 🍑 cobbler using chef Joh's recipe. The chicken marinade smelled sooo good I wish it came in an air freshener 😂😂. Oh, my birthday dinner was great. Thanks chef John for sharing your recipes.
“They chicken out like a bunch of jerks.” That was a good one, Chef John. Real smooth.
"They chicken out like a bunch of jerks."
How do you have the power to come up with these jokes?
Must be a dad.
I just made this for dinner tonight, came out perfectly!!! My husband said it was a little too spicy, but I loved them. Great recipe!!!
"Oh look, a Pepper sink hole" 😂😂 Love Chef John
Who dont?
After 7 years this is still my go to recipe for chicken wings. This recipe is better than the jerk chicken made by Jamaican restaurants I go to.
A huge part of the jerk style is the barbaque aspect of it. I know that you might not have access to a grill, but grilling the chicken along with some pimento wood chips makes a huge difference in taste.
I just used this recipe and my drumsticks came out fantastic. Tasted like I was in Jamaica again. Thanks for the great video!
That Cool Runnings reference...I'm dead.
That professional photo and you still look like a sneering river troll...i'm dead
+Derek Lang we're trailing in the division :(
Derek Lang
I’m just here bc the last name. 😉
This marinade is INCREDIBLE!!!
BTW: I once tried to grow Jerk Spices in the garden. They were so loutish and unruly, all the other veggies and herbs moved to the neighbor's garden. So, I buy mine, now.
What you are doing from the efficiency of your editing to your sense humor is as good as it gets. Bravo and thank you John!
I like to boil my wings before I bake them...makes for a crispier skin! Alton Brown has an amazing recipe!
They look Delicious.. I'd probably throw them in the broiler for extra crispiness.
Chicken out like a bunch of jerks 😂😂
Blackbamboo77 I actually lol at that 😂😂
Blackbamboo77 😂😂😂😂😂that was funny..
🤣🤣🤣 I didn't relized he said that till you said it
I caught that too lool
Great minds think alike 😂😂
If you guys have scotch bonnet in stock grab those rather than habanero, they have a different flavour that give jerk the distinctive flavour that a lot of people outside of Jamaica cant produce. They also add a bit of red stripe if you want to marinade it overnight (which is always a great investment.)
No they don't.
Perm Bee I don’t know who you are, but you definitely not a Jamaican or from the West Indies. Scotch bonnet flavour is a big part of what makes something tart more authentic and Jamaican
I used this recipe for normal chicken thighs and drumsticks and was so good. I'm a massive fan of jerk marinades but this was really really good!!!
Omg Hi Chef John , Im a Jamaican subscriber and I just wanted to tell you that you that did an amazing job ! You did everything so right !! . ginger is missing but its not important, you got the lime , sugar, allspice and scotch bonnet so i know damn well you did your research .
Wrong recipe only a Jamaican can make a perfect jerk and me , I have been a chef in Falmouth
How is it perfect if it's not done over a grill? Plus if you're Jamaican you ought to know that tiny bit of herbs and spices is not gonna give that authentic Jamaican flavour. PS Keep the seeds in
I gave this a try tonight, really hoping it didn't turn out like the americanized version of jerk (the kind of stuff u get at american food chains) that i can't stand. And i have to say i was so impressed it was so easy and so delicious! I didn't have any fresh thyme but i replaced it with fresh marjoram and it was still damn good. Thanks Chef
I just made this last night, and it was awesome. I used a rack. Make sure your marinade is not too liquid. The Chicken was awesome, we are having more for leftovers tonight 😊😊🌶️🍗🍈
Yum and with plantains too. Never had that locally before but definitely gonna try this.
This is the best receipe. I love the food wishes guy!! Easy recipes for the food challenged folks!! I cook for teenagers who like their mother love new things!
Oh man, that looks sooooo good!!!!(i didn't have lunch today 😄😄)
I make these every year now, for different occasions. I also make the Chennai wings. I’m Indian. I can never decide which one people rave about more. Thank you!
Ohh..those chicken wings look great, Chef.
I can’t begin to thank you enough for this recipe. They were fabulous. I brought them to my sons birthday party. They were such a big hit that now my daughter in law says I’m stuck making them for every event for the rest of our lives haha. I gave out the recipe all night. Fantastic. I was thrilled. Thx again. Have a great day. You’re the best ❤
It's funny how that bobsledding joke went over so many people's heads.
I think the vast majority of people on CZcams were born after Cool Runnings, sadly : (
Joke was really funny 😂
how would you know?
Yea I think pretty much everyone got it 😏
I don’t get it, can you explain please
My wings are in the fridge right now marinating with this recipe, getting ready for tomorrow's Super Bowl. I love this marinade, but tomorrow is the first time I am trying it out for friends. I'm nervous but excited.
"They chicken out like a bunch of jerks" was anyone else waiting for the pun sound?
i was waiting for the "bum dum tisss" rimshot, but alas, this is chef john
Jake Alstad Chef John did the rimshot at the beginning of the video, so you might have missed it.
Jake Alstad
A rimshot is when you hit the side of the snaredrum. Budum tiss is not a rimshot.
Until next time!
*flies away*
I used a pre-bought jerk marinade but followed this cooking recipe. They turned out smashingly awesome! My wife fell in love with me all over again. Thanks Chef John, another great video:-)
"They chicken out like a bunch of jerks…!!!"😂😂😂😂😂 Epic
Mine have been marinading all night, about to go in the oven for the game! So stoked for these.
"angry emails from psychotic pastry chefs" rofl
The best!
Peter tosh of your nosh 😂
I spent about half my cooking career as a pastry chef and can confirm pastry chefs psychotic nature.
This looks so good. I am Jamaican so this is right up My alley.. I will definitely try this..Thanks for Sharing..
0:19 "...the big sport there, of course, is bobsledding."
Mirandu Kan yeah thats just racist an kinda true
Its a joke. He was referring to the famous movie Cool Runnings about Jamaican bobsledders. And if you think its "kinda true" then you probably don't know that bobsledding can't be done at 88 degrees Fahrenheit in a tropical country.
Miles Edgeworth It really happened, Cletus. The Jamaicans didn't use real bobsleds to practice. They used a cart with wheels like they did in the movie.
Bobsledding isn't Jamaica's best sport
I'm a jamaican so it's really thrilling to see you showcasing our famous jamaican jerk thank you .have to make these soon .
You are the Peter Tosh of your Nosh.....love it haha x
Feel the rhythm! Feel the rhyme!
I'm just sitting here, chain watching these recipes. should be in bed lmao
I just want to let you know chef Tony, I love your videos ... Thank you so much for all of them. I learn so much from you ... Your appreciated.
Chef John, If you Paint then turn... Then turn and paint.. Wont you be painting the same side 2 times?
Yes, that's key.
+Food Wishes habanero substitute?
+Will Lopez No
I did this recipe times 4 with 12 fresh jalapeños and left out the brown sugar. Use the leftover seasonings on the sheet tray mixed with chicken stock as a sauce to put over white rice
Smart!
No matter how much food I eat before hand, I always get hungry watching your videos.
Painted and then turn. Turn and then paint. Doesn't that mean we'll just be painting on the same side twice and not on the other side?
Yes... see Chef John's comment above.
Yes I thought I was the only one to catch that.
Handle down my favorite recipe of all time! My favorite dish ever!
Chef John, Jamaican me crazy with this recipe
jerk chicken is my favorite...and my jamaican friend who is very serious about his hot sauce, uses only scotch bonnet aka habanero pepper...so this looks very legit
I love this... I just might try it. Just don't post the bones later, Chef John.
haha, love the Peter Tosh reference, all that's missing is the pimento wood. Also, who has time to play football when we can Bobseld down our lovely beaches and actually use our feet to play ball instead of running with it in our hands
Disclaimer: I'm not dissing NFL, there's a running joke about it not being football since you don't use you feet much on the actual ball
I thought i was the only one that got the Peter Tosh ref....
I am like a puppy drooling and seeing my owner speaking in upswing sounds.
LOVELY. This is the ONLY recipe I've seen in which habanero peppers are used. Sooo happy. Such an under represented or celebrated pepper. 🔥🔥
Dangit chef John. I wake up and think "TODAY'S THE DAY I LOOSE WEIGHT" then I click on your delicious recipe. WHY MUST YOU TORTURE ME SO.
Loosing more weight? Any more weight and you shall vanish totally.
Excellent recipe .Rum and brown sugar helps a lot . Thanks for your video .
"They chicken out because they're jerks" Nice! I see what you did there John!

Galore Music LOOOOOOOOOOLLL
I made this recipe about 2 weeks ago and have already made it since then. This recipe creates the most delicious wings I've ever had!
Nice Cool Runnings reference, Chef! XD
I tried this recipe and it's seriously amazing. We loved it! We're going to keep some membrane and seeds from the habañero for extra heat next time! We served them with beans and rice, mango salsa, and plantains. One of the best meals ever! Thanks Chef John.
I never deseed my peppers. But then again, I only cook for myself and am a bit of a masochist.
I prefer to think of it as you know what you're doing. Lol
Seriously, who discards the seeds.
Wait... so if we paint and turn, then turn and paint, isn't the same side getting double flavor? Doesn't the other side get any love? :(
that's what i was thinking too
Bobsled huh? Well..
FEEL THE RHYTHM!
FEEL THE THYME!
GET ON UP!
IT'S COOKING TIME!

"they chicken out like a bunch of jerks"... priceless.
this recipe is a instant hit in my book! Simple, quick, packed with mass flavor and a real crowd-pleaser. imagine blending part of that marinade into a beer batter and deep frying the wings...hmmmmm. Thanks Chef John :)
Can't find the time to buy thyme :(
Chef John. I don't always comment on your videos, but when I do, those wings look delicious. The most interesting wing recipe in the world. I have to try this.
I also like this recipe because like I said before I would like chicken wing that aren't fried, but have great taste and flavor. I am going to try this also and add it to my own recipe book at home. This is also a good video thanks a lot.

hahaha "they chicken out, like a bunch of jerks"....excellent pun there
Chef John you are really the best
Aha, i get it, they Chickened out like a bunch of Jerks, get it? Cause its Jerk Chicken? oh Chef, you got me again. >_>
"Chicken out like a bunch of jerks" MR Sesame Street voice...you are a legend.
why does he marinate then flip first time and then second time reversing the order? Wouldn't that only coat one side of the wings with marinate? if that's the intention, why?
Lol I asked the same thing. I need closure I just don't understand.
The marinate that he painted over the first time drips to the rest of the chicken, then when he flips it over and doesn't baste, he lets the flavor soak in, then the second basting, he lets the flavor soak in more.
phlyingpigs That just doesn't make sense to me. maybe it's because I'm from New Orleans. We're big on seasoning both sides. I don't doubt for a second this is delicious. I just don't understand why you wouldn't sauce both sides.
Yeh, I'd imagine flavouring both sides too. Not just one side repeatedly.
Hahah, i'd like my wings blessed by chef john :3
looks yummy, great I'll have to try this recipe
Old ass pun is old.
Jamaican me stupid here, Chef.
i just tried to do this... I failed miserably and then I stumbled on this video WHICH I will be using next time cuz this looks BOMB
