Fascinating. Yorkshire Tea has a Hard Water version.
I always drink purified water with mine, and haven't noticed any sour impressions, but you all make me curious to try distilled.

Regarding water:
Distilled water is a vaccuum,it will pull too much .
My local spring is a bit on the mineral side,so I mix a 50/50 blend of both.
Every spring has its own earth taste,one must adjust accordingly.
And,referring to brewing vessels,I never use Gaiwan,it is Tupperware to me.
I only use seasoned clay Yixing.
Why?
Because the experience of tea,the means by which it is made,it is a conversation,a clay teapot tells a story of the present moment,but with hints ,memories of past steepings.
That becomes part of the story,as all stories have a backstory,yes?

To reiterate,if you are a purist,then go for glazed Tupperware Gaiwan.
If you want the never ending conversation,strive on,with clay,as it is new experience combined with liquid Deja-Vu.
Yes clay and porcelain are vastly different. I use fulvic acid to make up for the minerals that are not in distilled water.
I went through this too. I discovered that my well water was way too high in some minerals and lime and was ruining my tea experience. I did an experiment with different types of bottled water and found that I liked Crystal Geyser the best for all types of tea. Of course, that is only my preference, someone else might like a different water with a different mineral content. It is definitely worth the effort if your own water is muting all the subtleties in your tea.

And my brewing vessels of choice? For all and any type of tea is the Gaiwan. Then other times I will use a Purple Clay tea pot for my darker teas. I don’t use the clay with the Oolongs or greens, those only get brewed in Gaiwans it ceramic pots. I do like the Gaiwans a lot for the easy changes in brewing times.

Look into Third Wave Water Classic Profile. I use it for both tea and coffee. The difference is positively staggering.

If you have very hard water like me, it could be viable to distill it and add around 1/3 of undestilled water back.
We are from South Carolina and we distill to remove impurities from the well. Your idea has merit
