I'd recommend checking out La Playa Stadium in Santa Barbara CA. It's literally 500 feet from the Pacific Ocean and has an absolutely breathtaking view!
Charlotte is an underrated big city. I have visited several times to watch sporting events. I am always intimidated when visiting large cities but Charlotte Uptown was so easy to walk around and enjoy myself. So clean and the people very nice.
Since you mentioned racetracks, I'd like to mention Phoenix Raceway in Avondale, Arizona, USA. The view of the desert hills around there is amazing, and people have regularly been known to climb the hills around it to watch the races at the track with an absolutely incredible view.

You Can add the „Neues Parkstadion „ to your List of special stadiums. It is the Home of the Schalke 04 Reserves and has parts of the old legendary „Parkstadion „ included. It is locatet directly nearby the „Veltins Arena „ and the famous Schalke 04 academy „Knappenschmiede „.
At Dennis Mahan Michie Stadium U.S.M.A. West Point you also get views of the Hudson River valley and Fort Putnam.The whole post(campus for civilians) is beyond beautiful. Go Army Beat Navy!
I've been to a couple games at Truist Field in Charlotte. The night games are the best. The Charlotte skyline at night is really impressive. I grew up near Charlotte and have watched that skyline grow tremendously and more buildings are going up.
I think the wildest thing about American stadiums is that the largest stadiums (by seating) that we have here aren't for the MLB or NFL but instead for COLLEGE football. Michigan Stadium at the University of Michigan isn't called "The Big House" for nothing.... the stadium SEATS 107,000... after renovations REDUCED the number.
At smiths ball park just over the outfield wall is the road and parking lots haha so the landscape is a nice touch for sure. And if I remember right when I was a kid there used to be a fire station located on the corner where the right field wall ends. Then bobby Dodd stadium in Atlanta I read somewhere once was built right on top of the cement bleachers from the original stadium that used to sit on the site pretty cool I thought
An underrated suggestion for your next video is my Alma Mater Ithaca College's Butterfield Stadium in D3 NCAA. Not much to it, but an absolutely spectacular view of Cayuga lake as it's built on the side of a mountain (hill)

So much for "the greatest setting in college football", per the late Keith Jackson. ("Visualize the Space Needle, the Cascade Mountains. Lake Washington...) Nice shot of the Stadium high school, too.
In your third installment, you could add Coors Field in Denver. You can see the Rocky Mountains from nearly every seat in the upper deck, and the "rock pile" bleachers offer a view of some of the downtown Denver skyscrapers poking out above the roof.
I am from Scotland and can say Fort William's Claggan Park is a truly stunning...stadium! I'd recommended Dumbarton FC's stadium if you were to do a part 3. It's located right next to the Dumbarton Rock and you can go to the top of the rock and watch the game.

If you make a third I could suggest Hasteinsvollur, home ground to IBV in Iceland and the slightly less impressive Proctor Cars Stadiums, home of Matlock Town FC and Surrey Street, home of Glossop North End FC who have views of different parts of the peak District.
Check out Memorial Stadium in Berkeley,Ca with it's view of the San Francisco Bay, the San Francisco skyline and Golden Gate Bridge. Also Sun Devil Stadium in Tempe,Az. They just removed seating and opened up the view of the Superstition mountains.
If your doing another one of these, Williamstown oval should get a nod, being on the beach with the entirety of port Phillip bay visible, it’s a good spot

As an Athletic Club fan I'm in love with San Mames and its location in Bilbao (Basque Country), at the end of a street full of bars where all the supporters gather before and after matches.
Eccles coliseum in cedar city utah. Home of Southern Utah University is a great shout. Different picture than the salt lake area, but sill amazing views

Montreal's Circuit Gilles Villeneuve should be on the list, located in the middle of the St Lawrence Seaway the grandstands on the start/finish straight offer stunning views of the St Lawrence River and downtown montreal. I'd also include Daytona International Speedway Leguna Seca and Sears Point International Raceway on the list.
STADIUM Gospin Dolac,town of Imotski and STADIUM Batarija,town of Trogir....both in Croatia have far more spectacular view than 90% of here listed stadiums
Regarding Rice-Eccles Stadium vs. LaVell Edwards Stadium - I would have to agree LaVell Edwards Stadium has a nicer view. The plus side for Rice-Eccles though, it has hosted the opening & closing ceremonies of the Olympic Games, and is poised to do so again.
Victoria Stadium, Gibraltar due for an upgrade soon to meet UEFA standards.. They've also got a brand new rugby stadium (well just) at Europa Point, from it you actually can see Africa and the Gibraltar Straits, though the view of the rock isn't as good.
