Making HOT Horseradish

  • If you are a horseradish lover, there is nothing like fresh made horseradish. It keeps very well in the freezer, so make plenty to last until you can harvest more. The trick to the hotness is harvesting after a hard frost, and then waiting three minutes after blending before adding the vinegar. Vinegar stops the enzymatic action in the blended horseradish and stabilizes the degree of hotness. If hotness is not your thing, you can add the vinegar without waiting three minutes.
    We love using our Blendtec blender, and double the recipe for each batch we make. Adjust to the amount that works best in your blender.
    Recipe
    1 cup horseradish, washed, peeled and chopped
    1/3 cup water
    1/3 cup vinegar
    1 tsp salt
    Blend horseradish for 30 seconds. Scrape down, and blend for 30 more seconds. Let sit three minutes. Add water, vinegar and salt. Blend until smooth, stopping to scrape sides down if necessary. Put in small jars, leaving 1/2 inch head space. Store in freezer until ready to use.
    We make this in our garage because of the fumes. Caution: never look into the jar of blended horseradish - it will burn your eyes! Always point the jar away from your face. Get some roots ordered to plant this spring for fall harvest, or plant in the fall.
    It grows like a weed, so be careful where you plant it. If you are not careful it can overtake a garden space.

    I have a blender I use only for horseradish, but both my Mom and her mother use to clean their meat grinder with Ice cubes and vanilla, and ice cubes and salt to clean coffee pots both work quite well. Thank you for the video. I'm getting ready to make mind again in about a week can't hardly wait!

    I grow my own and have found it loses its potency if I grate it and put it in the freezer. Love you mask, it's just what I need. Am going to have a go at making a horseradish cream and canning it and also try pickled horseradish.

    Hey there Thanks for the video. I'm in France where horseradish is not that widely available so a year or so ago I brought some seeds and planted.
    The original area died off due to excessive heat and lack of water as I was away alone of the time.
    Went for a walk over to local winery, about 2m. And wow its horseradishville in and around the ditches.
    So going to harvest and process.
    My question is what makes the horseradish hot? Or how do you control this in the process?

      As we mentioned in the description, if you wait until after a hard frost to harvest it, it will be hotter. Also wait for 3 minutes after you blend the horseradish to add the vinegar. The vinegar stops the enzymatic action and stabilizes the degree of hotness. Good luck!

    My horseradish is not hot at all I followed it step by step help my husband likes it the hotter the better

      It's the vinegar that reduces the heat. I fermented some horseradish and that also caused it to reduce the pungency. I'd love to find a recipe that keeps the heat!

      Did you figure it out? Mine is not hot either. It is driving me insane. I freshly grate it. How can the stuff at the grocery store be hotter than my freshly grated stuff?
