    I am moving out of state and I have a beautiful garden of horseradish. This video really helped me out. Our horseradish is from Romania and it is very good and pungent. I will be taking as much as I can ;)

    Alright - good point to wear googles and a mask when I’m grating my newly harvested horseradish roots tomorrow. Those fumes - potent!

    I used a carrot peeler and a centrifugal juicer. I actually got some juice which I just blended back in to the mix. I did wear a charcoal filter painter's mask to kill the fumes.

    I like it on brats, with chopped onions, dill relish and mustard. Great on roast beef. Also good on practically any kind of pork sandwich.

    We make it outside and use a hand grinder for the first cut then food processor. Vinegar and water and if a little stout a bit of sugar takes away some bite. To use straight or half ketchup for burgers and ketchup and hot sauce for Mexican cuisine. Beef burrito with the last mixture is my favorite

    I made my horseradish for the first time this year couple of weeks ago it tastes good, but it’s way to Woody. I think I should’ve only use the smaller roots half inch in size or so.

      That could help! Also, sometimes if the horseradish is stressed (not receiving enough water) that can lead to woody roots. I doesn't require tons of water, but if you've had a drought lately that could be part of the reason.

    If you grate with a food processor, grate it with the grate disk not with the cutter disk. This will keep the sharpness of the radish and it won’t evaporate while processing.

    I was looking for a way of keeping the roots alive and well after digging them up
    (before peeling and cleaning them)
    Like maybe replant them in a pot with moist sand or peat until you need it again ?

      You can either keep them in an airtight, plastic bag with a very slightly dampened paper towel in the fridge, or you can wrap them and put them in the freezer for longer term storage.

    I would think you could freeze the PASTE in small batches and defrost all year long. I freeze in a food saver bag. Thoughts?

      Good question! I wish I could say that was intentional, but I didn't end up using the water and it was still good out of the freezer. 😂

    Can apple cider vinegar be used instead of white?... with the mother?

      You could, but the horseradish is more likely to discolor. White vinegar is more acidic than apple cider vinegar, which is why it's the preferred choice in this recipe!

      I have not frozen it this way personally (I either freeze the whole root or grated without the vinegar and salt) but other people have!

      Currently, I don't have a root cellar so admittedly I'm not the best person to ask! But, horseradish does not like to dry out, so I would try storing it in a plastic bag where moisture won't escape as fast.
