2 Tbsp olive oil
1/4 cup white vinegar
1 lemon
2 Tbsp tomato paste
Spice Mix:
2 tsp garlic powder
1 tsp turmeric
1 tsp cumin
1 tsp coriander
1 tsp all spice
2 tsp smoked paprika
1 tsp onion
1 tsp cardamom
1/2 tsp clove
1/2 tsp cayenne pepper
1/2 tsp msg
1 Tbsp sugar
1.5tsp salt
Toum Sauce:
1 cup neutral Oil
2oz Lemon juice
Pinch of salt
2-3 oz Garlic

A bit late on this one, but this dish was so amazing that we made it twice in a row. The 2nd time, we made it as shawarma bowls and ugh it was so good. I was a bit shy of 2lbs of chicken, but had some meaty mushrooms, and used that along with the chicken and ugh, it was so good. To speed up the marinating process, I vacuum sealed the chicken/mushroom mixture and let it marinate for 4 hours, but it gave the same flavoring of it being marinated overnight. This is 1000% in our rotation and I think we're making it AGAIN this week.

I made this this weekend, was super happy with it. Subbed the lemon juice in the garlic sauce with Champagne vinegar, and I didn't have a charcoal chunk handy so I skipped the smoking in the pan. It definitely could have used a smoke element (liquid smoke in a pinch maybe?), But honestly it was spectacular. Diced up some cucumber to go on top too. Great recipe, GREAT marinade
