"Tonki" is a well-known Tonkatsu restaurant in Meguro Tokyo with a history of over 70 years. They are a family business. Grandpa is really their grandfather. They have similar faces, right?
Work in the kitchen kills many feelings and it’s scary ... For 5 years in the kitchen I lost my hands sensitivity to cold and heat due to constant temperature changes, disrupted the receptors due to constant tests of salty and sweet and peppery. Due to the large amount of work, I very often went hungry at work, now I only eat if I remember that I had not eaten for a day or two, and sometimes even a week, as the feeling of hunger had completely disappeared ... I also broke my sense of smell, which by the way I almost began to pose a danger - a gas column began to leak at work, but I didn’t smell it until one of the waiters told me that it smells of gas... I became much more nervous with this job, because of the rude guests, which ruined my relationship with my girlfriend and my friends. By the way, because of these rude guests, almost all of our waitresses are sitting on sedatives, and the restaurant manager is on antidepressants. Some of my colleagues earn hernias because of heavy pots, which sometimes weigh more then 20 kg, someone gets drunk due to problems in the family that are growing Because of the large amount of work when you are at work early in the morning and return home at night, some people are also addicted to drugs, since it is impossible to work 5 days at week for 14-16 hours in day without dope... This work does not bring a lot of money and only kills feelings, both physical and social
Nguyen Hùng :) well usually the “ one man doesn’t make anything” is like their sensei :) that means other youngsters that just followed that grandpa to study his techniques :) there are many young people like that, worked in a restaurant but actually studied how to do Japanese Fried eel or make sushi for 10 years :) google checks everything for free so you can use your free time to do more research instead of typing stupid things on the internet which makes people feel pity for your personality and your rudimentary knowledge

I live in Tokyo. This restaurant, Meguro Tonki is not the best tonkatsu restaurant in Tokyo. But it is the longest line in Tokyo for tonkatsu. This restaurant's open kitchen, and the way the people there work, makes me glad I came and ate here. Here is like a theater.

Gotta love Asian countries where they respect and treasure their elders. People know that the older generation have lived a long life and can contribute tons of knowledge and crafts into everyday living. It’s just sad that in the US, we don’t revere our elder population like Japan, we practically ignore and discard them to the side.
Yeah, Asian Culture mostly revolve around a more family-oriented set-up, so we mostly care for our elders thats why there are very few nursing homes that exist in several asian countries because the seniors are usually at their own homes.
I think in the USA most of us are trying to deal with the mistakes that past generations made to a point that it's very difficult to respect those older than us.
I just love how chefs cook and prep with no gloves on. I work at fast food store in Canada and remember there were customers just keep bitching why we not wearing gloves and all that while I was cooking with a WOK, no part of my hands needed to touch the food. And we wash hand every 2,3 dishes. Sometimes people just dont get it, wear gloves is not all save and not to mention it can be dangerous even
I think for street food, gloves is necessary because there are no wastafel nearby. But for full factioned kitchen it is not that necessary because you can clean your hand regularly. Pardon my english
With fast food, you often don’t stick to one specific role. Subway for example. The workers make the sandwich and they often times ring you up too. At a traditional restaurant, you have a front house and back of house. The “big boy” rules also apply too. Fast food is literally bottom of the barrel employees where you can’t rely on them to do anything correctly. Gloves just add a level of security.
Actually what's more important is that chefs wash their hands regularly. I agree that gloves sometimes get in the way of cooking the food better/the right way
That looks awesome. I appreciate your channel. I recently just tried Okonomiyaki because I seen it on this channel. It's was very delicious. Tonkatsu is one of my favorite Japanese dishes.
I've never seen it served with shredded cabbage, but I LOVE the idea. Wait a minute...now I remember...yes, they serve the pork on top of a thin bed of cabbage, but it never occurred to me to EAT the cabbage! I thought it was just there to absorb the remaining grease. The soup looks absolutely delicious!
WoW, Big Respects to two legend chef who is frying and handled the heat of a Pork Chops. I think I'll go in Japan soon. All the chefs there are working fast and hard but Pork Chops looks extreme Yummy. Edit: There's actually three grandpa but these two grandpa worked hard as I noticed.

One thing I've always heard is Asian's have so much respect for their elders. I wish the west would adopt that! I love and respect those that came before me and love hearing their stories of a simpler time.
You should,you will never regret when you in Japan. The amount of fun activities, delicious food, wonderful places and the technology of Japanese creation like almost every food vending machine which give you food that test good,hot and sometimes healthy too. Japanese is very busy place because they always work till night to take care their family,Japanese people are very polite make me love this place even more.Japan never disappointed me unlike US,i like US but their food is what make me don't want to visit often because they are expensive and make food sometimes greasy,overcook,etc... It not meant i hate US but they don't give their love to food that they made which i disappointed about.
