I think it's pretty much automated by the program. I guess they basically track where the camera is relative to Conan, and where Conan is in the virtual reality, so they know from which perspective to view the whole scene. Then they check which items are behind Conan, which they draw on the screen first, then they "draw" Conan, and then they draw the things in front of Conan, as "seen" by the camera perspective.
It is just mix reality which is a feature in Vive.

He didn't take the chance when he saw the "cold, dead eyes" of the trainer to say, "I'm sure I've seen that expression before. Those eyes are Jordan Schlansky's eyes."
The joke about his audience not laughing at his jokes was better. Not only it perfectly fits his comedy style, but more people would get that joke than the Schlansky one.
Jordan isn't depressed, he's just robotic. Hence, as another commentary pointed out, that one computer staring at him would be more of a Jordan.
