It’s actually not that hard due to the fact that unlike the vanilla P5 randomiser, the enemy will randomise every time. Say shadow kamoshida was replaced with something that you can’t beat, once you die to the enemy and press Restart Battle, it’ll be a different enemy. Whereas the vanilla p5 randomiser made it so that same enemy would be there every time. Meaning if it was too hard you’d have to reset the whole randomiser. Now you can just essentially keep dying until you find an enemy you can beat. Sorry if that takes a bit of effort to read.

When you brought up the "I've 100% this game" point, I laughed cause anyone can easily 100% this game... There's no difficulty tied achievement so y'all can play on safe mode and get all achievements no problem
Depends what version you get, if you get it on steam, you can choose which button prompts show in the game config. If you get game pass or Microsoft store I think you have to mod the button prompts in.
Except for bosses and mini-bosses, shouldn't it be like this most of the time? The palace is the collective unconscious that probably let different cognition/thoughts fly about in their head sometimes, so it wouldn't be random if you came across a little Jack-o-lantern or Enemies from past palaces. The only time where I draw the line is the Reaper because he's only supposed to be in Mementos, and enemies that are too strong and/or not supposed to meet until later on in the game when you're stronger. Other than that, let some random enemies along with the Palace enemies come about.
