[No Mold] Crispy Custard Cream Pie Recipe :: Best Cornet Pie :: Dessert Recipe

Crispy on the outside and soft on the inside with custard cream.
This is a really delicious dessert recipe.
You can make wonderful desserts that you can buy without a mold, so make sure to try it.
If the dough is bothersome, you can buy croissant dough and make it.
*** Measurements are on a scale (g), rice spoon (Tbsp), and teaspoon (tsp) (not a measuring spoon)

✤ Pie Dough
- 300g Soft flour
- 3g (1tsp) Salt
- 165g Cold water
- 200g Room temperature unsalted butter
✤ Custard Cream
- 4 Egg yolks
- 40g (4Tbsp) Cornstarch Powder (Flour possible)
- 330g Milk
- 80g (8Tbsp) Sugar
- 5g (2tsp) Vanilla oil
✤ Egg Wash
- 1 Egg + Milk 16g (2Tbsp)
✤ After Baking
- Sugar Powder
✤ TIP
- The custard cream had 3 yolks in the video, but the quantity was not enough, so I increased the amount to 4 eggs.
- After cooling the custard cream, it hardens into a lump, so use a hand mixer to soften it.
- If using vanilla essence, add it after boiling the custard cream.

I absolutely love these custard filled horns. I can never find them anymore with custard filling they always have an icing in them and are terrible. I haven’t made them myself because I am scared I will start making them all the time. Lol. Thank you for all you do and share

Also, if anyone plans on making this, I want to share how I almost failed the dough and how I fixed it. Before I do, I have to say that my family unanimously agreed it was worth the effort because of how good the final result was compared to the store-bought puff pastry dough, so I encourage you to give this a try. (If I could do it, so can you!)
What happened: The butter started oozing out through the dough as I was trying to roll it.
What I did wrong and how I fixed it: Well, the thing is, everytime I watched a puff pastry dough recipe, the emphasis is on keeping it cool at all times. Having 30+ degrees outside, I was very careful to keep it very cool at all times. However, what nobody tells you is that, if the butter gets too COLD, it will also mess it up! I could barely roll it before it started to come out. But I pushed through and managed to fix it. I am not a professional baker (if you read this and happen to be one I would absolutely love to hear your imput on this), but this is what worked for me and maybe it will work for you too if you find yourself in the same situation while making this:
1. When it got too cold, I let it sit on the counter for 5 minutes before rolling.
2. I was very generous with the flour, sprinkling it over the dough and the rolling pin from time to time.
3. I mostly pressed the dough into shape like shown in the video at 3:32, slowly and gently.
After almost giving up on the dough after the first 2 sessions of rolling and folding I did the 3 things above for a couple more sessions before resting it one final time and rolling/cutting it into shape. The result was perfect, you could clearly see the layers. It was crispy and flaky but it melted in your mouth, just as it's supposed to.
