    Hi!
    Today, I made a crispy Portuguese-style egg tart
    This recipe used the video from the food creator 'Cooking Tree'! It's really delicious and easy recipe!

    * This recipe refers to the recipe of CZcamsr 'Cooking Tree' *
    ▶︎ Mold size
    Total: 280mm * 180mm
    One hole: 70mm diameter * 30mm height
    *If the size is smaller than the mold I used, I recommend cutting the amount of custard cream in half!
    ▶︎ Ingredients (12 pieces)
    for Pastry dough
    : 150g All-purpose flour, 35g Unsalted butter, 65g Water, 2g Salt, 3g Sugar, 80g Unsalted butter (for peeling)
    for Custard cream
    :6 Egg yolks, 135g Sugar, 25g Corn starch, 370g Heavy cream, 250g Milk, 1 Vanilla bean (or Vanilla extract 1Tsp)
    ▶︎ Recipe
    - Making dough
    1. Add cold butter to sieve all-purpose flour and mix with spatula or hand.
    2. Mix salt in water and put in all-purpose flour.
    3. Mix lightly with a spatula.
    4. If the dough is lumpy, pat it with your hands and spread it thinly using a rolling pin.
    5. Spread 1/3 of the butter at room temperature over the dough.
    6. After applying butter, fold the dough and wrap it in a wrap and put it in the refrigerator for 1 hour.
    7. After an hour, use a rolling pin to push the dough back.
    8. Take 1/2 of the remaining butter and spread over the dough.
    9. Fold the dough and wrap it with a wrap and put it in for 30 minutes.
    After 30 minutes, push the dough back to the rolling pin.
    11. Take the remaining butter and spread over the dough.
    12. Roll the dough round and wrap it in a wrap and store in the refrigerator for the last 30 minutes.
    - Making a filling.
    13. Separate egg yolks and whites.
    14. Add sugar from separated yolk and mix.
    15. Add all-purpose flour and mix one more time.
    16. Put milk, whipped cream, and vanilla bean in a pot and boil over low heat.
    17. And please cool it down.
    18. Add warm milk to yolk and mix.
    19. Place the finished filling in a pot or a good container to pour.
    - Baking.
    20. Spread butter evenly on egg tart pan.
    21. Take out the dough stored in the refrigerator and cut it regularly with a knife.
    22. Put the cut dough into a mold and spread it out with your fingers.
    23. Pour about 90% of the filling into the dough.
    24. Put it in a preheated 180-degree oven, bake it for 30 minutes, put it on a cooling net and cool it down before you eat it.

    - 반죽 만들기
    1. 체를 한번 친 중력분에 차가운 버터를 넣고 주걱이나 손으로 으깨며 섞어주세요.
    2. 물에 소금을 섞은 후 반죽에 넣어주세요.
    3. 주걱으로 가볍게 섞어주세요.
    4. 반죽이 덩어리가 생기면 손으로 치대준 후 밀대를 이용해 얇게 펴주세요.
    5. 반죽 위에 실온에 둔 버터의 1/3을 넓게 펴발라주세요.
    6. 버터를 바른 후 반죽을 접고 랩으로 감싸 냉장고에 1시간동안 넣어주세요.
    7. 1시간이 지나고 반죽을 밀대로 이용해 다시 밀어주세요.
    8. 남은 버터의 1/2를 덜어 반죽에 넓게 펴발라주세요.
    9. 반죽을 접고 랩으로 감싸 30분동안 넣어주세요.
    10. 30분이 지나고 다시 반죽을 밀대로 밀어주세요.
    11. 남은 버터를 덜어 반죽에 넓게 펴발라주세요.
    12. 반죽을 둥글게 돌돌 말아 랩으로 감싸 마지막으로 30분동안 냉장고에 보관해주세요.
    - 필링(커스터드 크림) 만들기
    13. 달걀 노른자와 흰자를 분리해주세요.
    14. 분리한 노른자의 설탕을 넣고 섞어주세요.
    15. 중력분을 넣고 한번 더 섞어주세요.
    16. 냄비에 우유, 생크림, 바닐라빈을 넣고 약불에서 한소끔 끓여주세요.
    17. 따뜻하게 식혀주세요.
    18. 노른자 반죽에 따뜻한 우유를 넣고 섞어주세요.
    19. 주전자나 따르기 좋은 그릇에 담아주세요.
    - 굽기
    20. 에그타르트 틀에 미리 버터를 골고루 칠해주세요.
    21. 냉장고에 보관해뒀던 반죽을 꺼내 칼로 일정하게 잘라주세요.
    22. 잘라낸 반죽을 틀에 넣고 틀에 맞게 손가락으로 펴주세요.
    23. 만들어뒀던 필링을 반죽에 90%정도까지만 부어주세요.
    24. 180℃ (356℉)로 예열해둔 오븐에 넣고 30분동안 구워준 후 식힘망에 꺼내 한김 식힌 후 드세요!

      I don’t have unsalted butter can I use salted butter.?

    I made this last night following your steps, it turned out perfect. I was surprised that i could do it. The taste and the crunch were super delicious!!! But there's still much the custard left so today i will bake them as pudding 😋

    잘 만들어 먹었어요~
    바삭 바삭 맛나더라구요ㅎㅎ
    안에 크림 만들때 한 번은 중력분 쓰고 다음날에는 옥수수전분을 사용하였는데요, 중력분을 사용했을때는 1/2 가량이 남았고 옥수수전분을 사용했을때는 딱 맞더라구요!! 만드실때 참고하시면 좋을것 같아서 글 남겨요😊

    I made these today! It's not as crunchy( its a bit soft and even after leaving in the oven for 5 more minutes) but still really delicious! Oh and the filling is too much I had about half leftover so I will try to make the dough again tomorrow for another batch :)

    Just a tip for anyone, your scales probably aren't anywhere near accurate enough for 2g of salt and 3g of sugar - half a tsp salt and 1 tsp sugar is what I used

That's why I answered because it didn't deviate much from the taste of egg tart. Of course, whipped cream and milk are different as products. I know. But I didn't think it had a big impact on the taste, and the result wasn't a big problem either. Do you mean after making it? Don't generalize too much. That's really rude. Don't talk to me like that's all. I hope you break that bad habit. I'm just saying no and answering questions while considering how people can enjoy their food more. Have you ever thought about that while writing comments? It's really bad behavior to say hurtful things. I want you to take care of yourself first. What a rude kid.

    Hi:) I tried for 2nd time. This time round I freeze the pastry 1hour, 30min, 30min instead of refrigerate. I suspect my country too hot and humid (Singapore) approximately above 30degrees. I also put more butter in between the folds of the pastry. I turned oven temperature up to 200 degrees. After baking I could see the base of the tart look a little flaky but overall texture is hard and crunchy like biscuit but not soft and flaky:( not sure why though.

      You've made it again! I really want to applaud your passion! I think you'd better not put more butter in first! Put the butter in the original amount! Too much butter can fry the dough and make it hard! And I think the oven temperature is too high at 200 degrees. I think the temperature would be 185 degrees or 190 degrees! Are you preheating before baking? And don't let the cold air disappear in the dough! It'll be a better egg tart if you keep this much! Do you have Instagram?
