  • I have to admit, I'm a big fan of Julia Child...and I love eating croissants, the plain ones especially with my choice of jelly or cream cheese. I googled a recipe in which Julia Child has a guest French Chef Esther McManus show us how to make croissants from scratch. The recipe asks for very few basic ingredients, but takes a day and a half...It is so gratifying to put in a genuine effort and achieve success in the end! The Yup'ik elders tell us to never give up, because the Great Creator will take notice, and reward generously eventually...I added my sister Maureen Dock's gospel singing as the soundtrack. The first song is sung in Yup'ik, and I cannot stress enough to talk to and teach your children the language as it will help define who they are and give them identity, and a belonging to a wonderful people and culture. I reduced the amount of butter by 1/4 cup to make it an even 1 pound, or a package of butter. I used salted butter since our village stores do not carry unsalted butter, and reduced the salt in the flour down to 1 teaspoon.
