Every cooking channel/show has a personality (Gordon Ramsay is efficient + posh, Binging with Babish is pop culture + self deprecating, Food Wishes is recipe + voiceover, Alamazan is wilderness + fire, etc), and I'm worried these shorter videos are missing your chill vibe. It feels a little like a "best of" compilation of your cooking. That said the food still looks delicious. I'm gonna try this when the snow melts.

I trim all my elk clean...99% fat-free. When cooking one does want to add a good-tasting fat. Bacon is one of these good-tasting fats. Even with my elk burger, it is 99% fat-free in the trim. I mix it with some great 70/30 ground beef at a ratio of 1 part ground beef to 4 parts ground elk. Your method here looks great. Hopefully, I'll get to use it this year (should someone in my family get lucky enough to get an elk). Thanks for the video!
@Oswald Smith I bought it from Harveys UK on Ebay, it cost £23 but it needs a bit of work done to it before it is fully functional, needs some more air holes drilling and anti rust paint applied to them, it also needs a new thermometer because the one that comes with it is not very accurate. Overall it is pretty decent for an entry level smoker but don't expect it to last too long, it does the job.
I made this right away with deer tenderloin and it was terrific! The other day, my son brought home a small bison chuck roast and I cubed it up tried the recipe again and it was excellent, too! Thanks!

I managed to convert my Vegan sister into eating Pulled Pork and Ribs on Australia Day 2020. She said the aroma of the low and slow cooking just got to her. She even had a pre-bed snack at 1am of more Pulled Pork. :D
I start to think that Malcolm doesn't like game meat. you never actually see him eat what he has made in these game meat videos. And also they seem a bit rushed. But still can't wait to try a recipe out, just need to go hunting for that.

But with the lack of 'let's get to cooking' in the latest videos, with a vast improvement on production, i do hope that this doesn't turn into one of those 'You cook someone edits' things. Like, the smile at the start of cooking, is absent. I know these guys probably pay well? However, we come here for the big Mr Reed. Although production value has gone up, i do hope we see the backyard again. It is great to see you expanding, but it's noticeable when it does look scripted, like an advertisement. Which, yeah it could be but we also love you being you. Used to do something similar with deer and even duck breasts where we’d cut the meat into thin wide strips then wrap it around a water chestnut and a slice of jalapeño then wrap it in bacon stick a toothpick in there then Chuck em on the grill we called em poppers man they were a hit every time
