  • Great visual to learn how to stretch and fold your dough! Bakers use the stretch and fold technique to gently strengthen the gluten and incorporate air into bread dough without kneading. When done correctly, it will increase the overall rise of the bread (and it's fun to do!).

    My dough does not look like this when it's time to stretch and fold. Mines all bumpy and clumpy. And my bread has been turning out dense.. what do I need to change??

      Can you tell us more like what recipe you’re using, what kind of flour and if you’re using a scale cause those things can make a huge difference. It’s very normal for it to look lumpy at first depending on what recipe you’re using. For example many sourdough recipes you start out with a very rough looking dough and through a series of stretch and folds or coil folds and resting periods in between the dough gets much stronger and smoother over time.

    I'm confused at how many stretch and fold sets to do while making sourdough bread. If the recipe says do 4-5 Stretch & Folds (during a 3.5 hour Bulk Ferm) at 30 min intervals--does that mean only do one set every 30 minutes until 4-5 sets are done (then let the dough rest for the remainder of the BF time)?

      I do the former. 1 set every 30ish minutes for a total of 4-6 sets.

      Yes it can get confusing! Baker methods can be different. Stretching the dough 4-5 times is considered 1 set. This set is performed 3-5 times during the bulk fermentation. The purpose is to help to develop the gluten and strengthen the dough. While sourdough is a science, it can be forgiving.       How do you do this without lifting the bowl off the counter? Every time I grab a side, the whole bowl comes up with it!

      There are a million variables but it sounds like you might be using a high hydration recipe. That being said, the first stretch and fold is usually a bit sticky. As you continue with your folds the dough gets smoother and stronger.     How the hell do you even get your dough to come together like that in the first place? I'm so frustrated. My dough just stays a sticky gloppy mess and never forms into an actual dough...

      Not sure if you got an answer, but is there a chance youre letting your dough ferment out on a counter at room temp? Theres a chance that the warm environment at room temperature is over fermenting your dough and preventing the gluten from forming. Ever since then I started bulk fermenting my dough in the fridge, taking it out only to stretch and fold, it solved my problem.

      @@Tony18Rox Thank you for the response. I was following a recipe from CZcams where the guy left it out on the counter to rise or ferment or whatever it is, and yeah my doughs NEVER came together. Guess I'll have to try the fridge next time

      TheTopwaves awesome! Let me know if you got a nice shiny dough ball. Start at a low hydration percentage. I’ve found that a sourdough pizza dough is a great Segway into sourdough to then make sourdough bread loaves

      Hi there! I would definitely start with a lower hydration dough which will be less sticky and easier to handle. The Beginner Sourdough on my blog is a great place to start. This dough is at 70% hydration for reference, which is why it holds together. Hope this helps!

      It depends on the recipe you're following, how much liquid is in the dough, the type/brand of flour used, temperature etc. So many variables to consider. In this video, the dough is approximately 70% hydration (flour to water ratio), and I used KAF bread flour.
