No Mess! Dough comes together in 30 seconds with a food processor!
This step-by-step video will teach you how to make homemade sourdough pasta with 3 simple ingredients: flour, eggs and sourdough starter (active sourdough starter or sourdough discard).

Hi why my dough cannot be stretched like yours?!it’s very hard to stretch my dough even though I rest my dough for 30mins interval 😢

Can you use stand up mixer with dough hook to mix the egg and flour?
YES you can, I always use it for making soup noodles for the whole year.

Emilie, your recipe is fantastic and foolproof! I had never pasta before and now I’m making fancy stuff like raviolo al uovo and lasagna! The pasta texture is delicate to eat yet supple to work with. I use organic all purpose flour. Next I’ll try it with Tipo 00. PS. Sourdough pasta seems good for diabetics too!

For the sake of authenticity ricotta is actually made from the whey, by boiling the acidified whey after the curds have been collected to make other cheese (like mozzarella). This gives it its name ricotta, meaning "re-cooked". Good recipe still tho!

My dough does not look like this when it's time to stretch and fold. Mines all bumpy and clumpy. And my bread has been turning out dense.. what do I need to change??
Can you tell us more like what recipe you’re using, what kind of flour and if you’re using a scale cause those things can make a huge difference. It’s very normal for it to look lumpy at first depending on what recipe you’re using. For example many sourdough recipes you start out with a very rough looking dough and through a series of stretch and folds or coil folds and resting periods in between the dough gets much stronger and smoother over time.

I don’t know if I’m nit-picking, but when you cook pasta, your water should be at a rolling boil. What you’re talking about wanting your milk to do should be a gentle simmer. Otherwise, great video!!!
Thank you so much for sharing your method and helpful tips! I was looking for a way to make great sourdough in my toaster oven. I used a ratio closer to 50/50 of 00-flour and whole wheat and it came out excellent!

I usually make a huge batch of pasta and air dry it for a day or so, depending on humidity, and store it airtight for up to a month in the pantry. Or give it away to friends. Is that an option with sourdough pasta? Have you tried drying it completely and storing it?

Trying to decide if I want to start making homemade pasta. I love to cook and spend most of the time in the kitchen. This was very informative. Can I use the stand mixer for the mixing kneading process to save some time?
Yes. Absolutely. Mix until combined (use the dough hook). Then knead on speed #1 or #2, about 4-5 minutes.
When I learned how to make pasta in a class i was told you can, but make sure you make it by hand a few times so you know what the dough is supposed to look like. Once you think you know what it is supposed to look like, you can then spot it in the mixer.

I'm confused at how many stretch and fold sets to do while making sourdough bread. If the recipe says do 4-5 Stretch & Folds (during a 3.5 hour Bulk Ferm) at 30 min intervals--does that mean only do one set every 30 minutes until 4-5 sets are done (then let the dough rest for the remainder of the BF time)?
I do the former. 1 set every 30ish minutes for a total of 4-6 sets.

Yes it can get confusing! Baker methods can be different. Stretching the dough 4-5 times is considered 1 set. This set is performed 3-5 times during the bulk fermentation. The purpose is to help to develop the gluten and strengthen the dough. While sourdough is a science, it can be forgiving. How do you do this without lifting the bowl off the counter? Every time I grab a side, the whole bowl comes up with it!

There are a million variables but it sounds like you might be using a high hydration recipe. That being said, the first stretch and fold is usually a bit sticky. As you continue with your folds the dough gets smoother and stronger.
