Kerala Appam Recipe with Yeast-Palappam-Spongy Appams-Two Methods

  • Appam is a spongy and lacy pancake prepared with fermented rice batter. It is a popular breakfast in Kerala . Appam is made in a special pan called "appachatti". In this video I have shown 2 methods to make appam - one with yeast and raw rice and another adding cooked rice. Both the recipes fool proof recipes, guaranteed to give you soft, spongy and lacy appams, which just melts in your mouth. Appam is usually served with sweetened coconut milk, kurma or stew.     Nice app am. My mother use to make in DOS a batter just adding yeast over night. It use to be crispy in edge and soft in center. I lost the iron Kadai and stop making. Now i have prestige kadai. I was just doing sides. Now will try appam. Thank you. i

    Great video Padhu!! A few suggestions from a Mallu:
    1)Adding cumin while grinding rice gives appam extra flavour.
    2)When heating appam batter to convert to ghanji consistency, add few drops of water if the batter sticks to bottom of vessel to loosen it up.

More than 4 years during Navarathri I prepared all variety rice (especially nellikka sadam, Ellu sadam )as Neivedyam as per your recipe and turned first class. When my son wanted to give a try on Paneer butter masala I referred your site. He followed and was happy that he got wonderful result(previously 3 times I prepared and got nice result).       After grinding, you can add. Once it ferments, put it in the refrigerator n make appams in the morning. When you add yeast, it takes very less time to ferment.

    I wish to make this at morning.so after fermentation without adding water can I store in fridge and take at morning and add water and make appams. If by doing so will the appams get hardened

      Yes, you can make. Just bring the batter to room temperature before making appams.

      No. Just 3 hours is enough otherwise it will be too yeasty n sour.

      Dear Kalpana
      Yeast is a commonly used in baking and not harmful in less quantity. We add very less for Kerala appam. But if you do not want to give it to your kid - you have this Tamil Nadu appam which has no yeast nor baking powder or cooking soda, yet it is very soft and spongy.       If you want to add appam soda instead of yeast to the Kerala style appam - you should add before making and mix it well. Add only to the batter needed for that day.
      You can store the batter in fridge and use it within 2 days.

      Yes, I have a recipe of Tamil Nadu style appam without yeast in my website. You can check that but that will not be as lacy as this. It will be soft but not the melt in the mouth softness as Kerala appams. I will soon post a video on that. For now you can check my website which has the recipe with pictures.

      Yes, you can do Tamil Nadu style appam which I will publish video soon, but recipe is that in Padhuskitchen.com . For Kerala appams , you have to add yeast or baking soda. For traditional Kerala appams, they add toddy.

    I add 1/2 cup soaked aval and grind with the rice. No ned for kanji or cooked rice. Of course I add 1/2 tsp yeast

      No, it is raw rice. Maavu arisi is a variety of raw rice. You can use regular raw rice if you cannot get that. It is easily available in all groceries in Tamil Nadu
