- Roasted Garlic & Red Pepper Baingan Bharta
Serves: 2
// INGREDIENTS //
- 1 large / 2 medium eggplants, cut in half
- 1 red bell pepper, quartered or just stem and seeds removed
- 1 head of garlic, slice top head of garlic to expose cloves
- 1/2 red onion, finely diced
- 2 green chilies (+/-), finely chopped
- 2 large tomatoes, diced (or I used half a 14oz can of diced tomatoes)
- 1/2 tsp mustard seeds
- 1/4 tsp turmeric
- 1/2 tsp kashmiri red chili powder
- 1/2 tsp coriander powder
- Salt to taste
- Chopped cilantro for garnish
- Small wedge of lemon (if needed)
// RECIPE //
1️⃣ Coat eggplant, red pepper, and garlic in a bit of oil, place on baking tray skin side up (cover the garlic in foil), and roast at 450F for 20 min or until the eggplant collapses and then broiler for 5 min (everyone's oven strength is different so keep a close eye on it and take it out when the bell pepper is charred).
2️⃣ Cover the red pepper in small bowl to sweat and set aside. Scoop out the eggplant, eliminating any extra water and mashing it well, and then squeeze and smash in the roasted garlic with the eggplant. Once the red pepper has cooled down, remove the skin and dice.
3️⃣ In a pan, heat up some olive oil and add mustard seeds, when they start popping, add onion and green chilies and sauté for 2 min.
4️⃣ Add spices, salt, and tomatoes and cook until tomatoes are completely softened and jammy.
5️⃣ Then add in eggplant/garlic mixture and red pepper. Mix and cook for 2 min.
6️⃣ Taste for salt, add a small squeeze of lemon if needed, and garnish with cilantro!

Every Indian mom makes bengan ka bharta with her different twist and the only time I loved bengan ka bharta apart from my mum's was one of my friends as it tasted a bit tangy but that flavour was damn good later I came to know it was amchoor namak . Do add it after finishing it if you love tangy stuff too .

Christmas is coming and of course a true Romanian household needs to have salată de vinete and zacuscă on the table.

First of all, I want to say your pronunciation for zacusca was absolutely amazing! Second of all, there is another spread that we make here with roasted eggplant called salată de vinete (translated, it would be eggplant salad) which is also pretty popular around here. I don't know about any other Romanian eggplant spreads, but if there are any Romanians from somewhere other than Brașov who know more recipes, please leave them in the replies. Lots of love from Romania!
In Bangladesh we make "begun er Vorta"(mashed eggplant) ,at first we roast the eggplant thn mix choppd onion,toasted red chilli,mustard oil,salt,corriander if someone want togather and thn mash the eggplant with the mix,it tastes heavenly with boiled rice

Brinjal isn’t even a real word. It only exists in India and the word derives from Portuguese. There is a different for eggplant in nearly every Indian language so I guess it makes sense to pick a translation of it that most would recognize.

I am makes sense that cultures from all over the world love eggplant it’s so versatile. I personally don’t like it on its own but once it’s roasted, it become super creamy and my favourite way to cook. It is in a stew because it completely breaks down and just thickens it beautifully

Eggplant 🍆 is my favorite. In my home country we have a dish similar to baba ganoush called salata de vinete. So good!
In South Sudan we make something similar but we fry the eggplant on the stove instead of roasting in the oven ❤ one of my favorite dishes

I keep asking y mom to teach me and she does and then I forget half the steps every time I think of making it myself RIP (and cooking with mums is STRESSFUL so I was hesitant to ask her again lol-- solo cooking is soooo much easier on the nerves). I love baingan bharta! I made it quite a few times last summer over an open fire while camping as I bikepacked across the US from San Francisco to Maine. Onion, eggplant, bell pepper, ginger, & garlic are surprisingly durable & transportable, and cook nicely with a wood fire. Because I was only carrying a small 1.5liter pressure cooker as my pan, I would cook the garlic ginger & onions in that while charring the eggplant and bell pepper on some wood coals. I would use fresh tomatoes when I came across farmers stands, but I also used dried a couple times.
I just love anything made with baingan, especially baingan bharta. Can’t believe a lot people are not a fan of “aubergine” lol

@@972pa.Sure dear! But I hope I'm not too late.😅 Put some heeng(asafoetida) and jeera(cumin seeds) in some oil, let them cackle, put roasted eggplants in it(remove its peel though). Let it cook for a while, then put some turmeric and salt. If you want you can put some cut green chillies in it to get some kick. When it's cooked, remove it from the heat, let it cool completely. Then put some yoghurt and coriander leaves in it. It is served cold with rice and some other hot and spicy dish. 🤗🌹

Eyyy gotta try that. In Bangladesh, at least the way we made it, didn't involve tomato paste. So I look forward to trying it this way. We make ours spicy and eat with rice. 😊
