its an OLD transformer , being experimenting to get the right voltage , why dont you build a regulated power supply circuit,,, its just ruining the wind of the transformer, goodluck !

Better to place a 12 v light bulb in series with diode, as result it will "indicate" charging level and limit current with some stabilisation. Transformer is realy cool, powerful and almost universal.

For constant current.
I think it creates a magnetic flux and stores energy, adding or taking energy when needed so it smooths out the voltage. I've seen people use a capacitor to do this too.

Learn what standards are equied fo PB batteries, what charge you need fo a specific battery, just because its 10Ah 50Ah you must not charge it with 10A o 50A lol, Standard safe changing of Lead cells is 10% of its rating, ex 10Ah needs only 1amp charge current, 50Ah batteries only require 5A current, you will destroy the plates man unless you intend to beak batteries, these wet cells ae to designed be be charged fo 12 hours, not an hour, maybe 2x on quick charge by doubling the standard charge.
next, learn the full charge voltage of lead acid batteries, full voltage of 14.7volts for a standard Lead acid, google it, you can never fully charge a PB battery with 12 volts, 12.5 volts or 13 volts, it is only partially charged, you should have tapped on the winding's 14.7 + 0.7 (diode drop) = 15.4 volt ac coil.
That 2 diodes will only handle 6amps and might burn when the load goes higher on a flat battery. the voltage 13 volts is a standard rest voltage of these batteries when it is removed from a charger not the max charge voltage when connected to the charger.

14.7 volts is what you would use around half way through the charging process for about an hour to 3, for the bulk charge stage
Actually, you better do some internet research about healthy battery charging. It contains constant current, constant voltage and float charging. It should be done at least once a year in deep cycle batteries. Otherwise, you should never use a voltage more than 14,4v.

The maximum current you can pass through a pair of 5 amp diodes in parallel is 10 amps without destruction. 12 volts multiplied by 10 amps is 120 watts. The other 880 watts must be in your arse !
