Miniature cow is one of of the ancient breed in some parts of India known as pungunuru

Not interested in eating them but about that MILK, How much could they produce in terms of dairy products?
It will depending on the size and breed of the cow itself. But these smaller cows can produce 2 to 4 gallons of milk daily with he proper feed, water and care. I would imagine the smaller end of these cows you would get 2 gallons a day and that is still a decent amount of milk!
Got news for you. Cows only produce milk when they have had a baby to feed (Just like human females). So you have to have a bull to breed your cow to. That is feeding 2 cattle to start. Then, you have a calf. When the calf is weaned, you now have 3 cattle to feed. The cow must be bred again so that she will continue to produce milk, weaning calf #1 about the same time calf # 2 is born. Wean calf #2, with calf #3 on the way. Start with just 2 cattle, and within just a few years, and you have a herd of cattle. Because if you have heifer calves (females) you will breed them at about 3 years old. If you have bull calves, you will need to castrate as a calf, or find it a new home. Either way, additional males are only a financial liability, and if your acreage is limited, you will be out of space soon. Steers (castrated males) are really only useful in the food market. If you plan to keep all of your heifer calves, you will soon need a new bull, and get rid of the old one, because of the inbreeding that will occur if you don't. And the financial costs are escalating exponentially.You are going to have expenses such as veterinary costs (shots, regular "maintenance" care, emergency care, farm upkeep such as fencing and repair, building a barn and keeping it in repair, in addition to feeding a cow, even a mini, it is going to cost you A LOT to feed them. A 50 lb bag of feed is $12-15 or more, depending on where you live, and the current market price of grain. You will feed a mini 15-20 lbs of feed a day, plus hay, if you don't have VERY GOOD pasture. A milking cow eats more. What are you going to do with all of these cows you are accumulating while you just want a gallon of milk 1 or 2 times a week? Your fantasy world of living peacefully in Nirvanah quickly falls apart when you grow up and have to put on your big boy/girl pants and go to work taking care of all of God's creatures you have adopted. I grew up on a cattle farm (we also raised their feed, and it still wasn't free!) and as an adult, I have raised and trained show Paint Horses for 40 years. I love them, and have never hesitated to do what it takes to care for them, but I often worked 2 jobs just to pay for their feed and care, especially when I had a real herd of 25 horses. I have slogged around in the rain and mud, shoveled manure out of the barn when it was iced over snow and -10 degrees, and chopped ice out of frozen water troughs with an ax at 4 am, because animals bodies use water like antifreeze and they need more in cold weather than in hot. Bad weather doesn't put your chores taking care of them on hold. So be careful what you wish for. The world of the farmer, even the small one, isn't Disneyland.

has anyone done minature angus? i did a little study and typically the smaller and minature varieties give a better meat to waste bio ratio, and meat per lb of food ratio. Plus unhorned varieties make handling them easier, and because they aren't climbers like sheep or goats, much easier to keep.
