thank you, my wife and I were debating if we could eat the natural casing. we didn't even know if it was natural, lol

I prefer my own method much better. I cut off the salami into a 4 inch long "log." Then I slice it lengthwise down to the casing, which then peels off easily in 1 piece. Then with the flat sides down, I slice it into 4" long, 1/4" thick sticks, which I put in a container and refrigerate.
These salami meat sticks are very handy for frying or making sandwiches.
