    6 Tomatoes (boiled, deskinned & pulped)
    1&1/2 tbsp Red Chilli Sauce
    2 tbsp Ketchup
    1 tsp Oregano
    1 tsp Red Chilli Powder
    1 cup Basil Leaves
    Salt to Taste
    How To Make Béchamel Sauce
    1 tbsp Butter
    1 tbsp Plain Flour
    1 cup Milk
    Salt
    1 pinch Pepper Powder
    1 pinch Nutmeg Powder
    How To Coat Eggplant Slices For Frying
    1 Eggplant (sliced)
    Corn Flour (dusting)
    2 tbsp Plain Flour
    4 tbsp Corn Flour
    1 pinch Salt
    Water
    Brown Bread Crumbs
    Frying The Sliced Eggplant
    Oil (for frying)

    About Eggplant Parmesan
    Parmigiana , also called parmigiana di melanzane , melanzane alla parmigiana, or eggplant parmesan is an Italian dish made with fried, sliced eggplant layered with cheese and tomato sauce, then baked. The origin of the dish is claimed by the Southern regions of Calabria, Campania, and Sicily. Other variations found outside Italy may include chicken, veal, or another type of meat cutlet or vegetable filling. The dish consists of sliced eggplant, pan fried in oil, layered with tomato sauce and cheese and baked in an oven. In some versions, the sliced filling is first dipped and dredged in flour or breadcrumbs before frying. Some recipes use hard grated cheeses such as Parmigiano, while others use softer melting cheeses like mozzarella or a combination of these. |

    I used her batter/breading method but baked instead of fried. Turned out really really good!

    I live in Italy and I never knew about this recipe.
    This is a remix Indian and Italian dish …… it’s very easy to prepare this but u have made it complicated. Appreciate it.

    Reason to dust the eggplants with cornflour b4 dipping in the cornflour batter???
    Can't I puree tomatoes with skin??? If not why !!!

      The eggplant is dusted with cornflour so that it can absorb any moisture that is released while frying hence keeping the batter coating crispy. Also, the tomatoes are pulped so that there is a nice texture in the layer hence the skin is removed otherwise the bits of skin will keep coming in the bite.

    I had gone out with this girl twice. I have a hard time knowing if someone likes me, so I was going overboard trying to win her over. Then at just after 11 PM she texted me the eggplant emoji...that was all. So I rushed up the street to the grocery store to buy eggplant and Googled a recipe for eggplant Parmesan. It took me an hour to make and she texted me the eggplant emoji again just as I was headed out the door; so I knew she was hungry. When I got to her door and handed her the food I'd made she looked confused. I was feeling really anxious about how it tasted, it took forever for her to take a bite. But when she finally did and just set the plate down, I realized she hated it, and I just blew up.
    I told her I'd done everything in my power to get her to like me. But if slaving over a hot stove at midnight wasn't enough for her I was done. I walked out and slammed the door as she had the audacity to look shocked. I don't mind buying a girl dinner. But I'm nobody's Grub Hub!
