I like the theory that our character is schizophrenic and that all these people aren't animals hence why people accept their respective animal as our vision of them is based on animals they're like/like

For the lucky cat & teddy bear, it's not really that weird, it's like giving them a statue or a plush of a human character
As for things like a hamster, frog, or octopus, I think it's sort of like how a human can have a pet monkey, there's shared ancestry, but one developed into a more complex life form and one did not (and yes, I know there are monkey villagers, in that case evolution branched off and developed two complex species from one category of less complicated ones), in the case of Hamphrey getting sick, it's probably a case of a virus jumping between species, if diseases can become able to infect both birds and mammals, one could probably jump between two closely related species
