I usually cook my roast in a roasting pan along with potatoes, onions, carrots, and sometimes celery. I include flour and let it make its own gravy and it’s delicious. Thanks Ms. Brenda for sharing your recipe. My sister grow her potatoes in pots and they come out really well and plentiful. Enjoy your Sunday lunch with your family.
I would have to clean the meat up by cutting the fat and stringy stuff off. The fat does hold the flavor if you’re frying, grilling or roasting, but if you are boiling it the fat doesn’t help the flavor. I wouldn’t want to take a bite with all of that. 😊

But I wanted to tell you I don't want you to think I'm bossy, but when you use the right potato you can freeze them with your stew. And the best potato ever and I grew them for years and years is the Detroit red potatos with the white inside. They were as big as my fist and delicious when we grew our own. But I am 75 now and I have to buy those ones in the store they're not as good but they do a good job you asked of them. I bought your third book and can't wait to see it this fall. Looks good...I like a lot if pepper in my stew....I also add a bit of sugar to take the acid taste from the tomatoes ( I like the stewed Italian tomatoes) and a few rosemary sprigs... There's just something about a pot of stew 🍲😋😋😋

$5.38lb is actually a good price for that roast. Here in California I pay $9lb for boneless chuck roast. I’ve always coated my stew meat in seasoned flour then browned in a hot cast iron skillet before putting it in a big pot. My stew has more of a gravy. I’ve never added tomatoes.

First thing I lightly flour my chuck meat and then put beef broth(it Thickens) No tomatoes Parsnips, carrots, turnips parsley, onions, garlic But I'll be making your recipe with the tomatoes on the weekend..... WHEN YOU CAN'T FIND PHONE HOLDER: get out eyeglasses/sunglasses that have the curved ear piece, turn the glasses upside down with the ear pieces toward you with them partially open, set the phone in the hook of the arms leaning phone a bit toward the glasses
I think carrots hv a tendency to be bitter, so I use canned carrots for stew (I as you say, like raw carrots with dips)I also put a can of corn, green limas, green beans, and some precooked elbow macaroni YUMMMMM
We don't have Piggly Wiggily anymore they left our area. I sure do miss them. We lost our Winn Dixie too do ya'll still have them? They were the best stores. They had the best meats and good buys. I really miss those stores. I live in Augusta , Georgia.
When I make stew I take my chopped potatoes ( raw ) in cheese cloth and put in stew when we are done eating and I,m ready to freeze stew!I just pull out the rest of potatoes from stew and freeze stew without potatoes.

That's a different dish than the soup she's making. Same ingredients but it's soup. What your describing is roast.

Stew has bigger pieces of meat and veggies and is best simmered for a few hours.. can also add red wine or a good beer! 😋

San manzano or Red Gold are your best canned tomatoes. More flavor.
I use what they call new potato's and also never peel. In fact I don't always peel potato's when frying making french fries or Italian fretura😊
