- Love fried okra? Love Jimmy Red Corn? How about growing your own food? Well you're in for a treat! Tonight, we're back in the kitchen with Mama Hoss and she's cooking up some fried okra. There is nothing better than eating homegrown food! We store our Jimmy Red Corn in the freezer until we are ready to grind it into cornmeal and now we're using it to fry up some of our Star of David okra that we've recently harvested. Childhood memories of fresh fried okra, purple hull peas, butterbeans, and creamed corn with a slice of tomato and some hot buttered cornbread. Oh my goodness

Another great and easy way to cook fried okra is to put 2 Tbs of corn meal in a lunch sized paper bag. Put you okra rounds in the bag and shake. Coat the bottom of you cast iron pan with a neutral oil on a high heat. Fry for 8-10 minutes. Add some salt and maybe some Cajun spice at the end then enjoy. Easy and delicious.

Our okra is not producing very good this year. Hasn't this unpredictable weather been great ............................. NOT! Anyhow now more craving some fried okra before our summer is up. Thank You for sharing!

I've recently started eating fried okra at only a few select places. I know they are using an industrial deep fryer. Does your cast iron pan add to the flavor of your okra? I believe that I will give star of david a try next year and try frying some up.
Not sure about adding to flavor, but love the way it cooks it.

Who is Jimmy Red Corn?
Jimmy Red Corn was originally cultivated by the Native Americans, but has since become a staple red field corn in Georgia, Florida and the Carolinas. It was made popular by chefs in South Carolina, where it is a favorite ingredient for corn meal, grits and delicious cornbread. It is similar to the traditional Bloody Butcher red corn, but with an improved flavor. Like most field corn varieties, Jimmy Red is yellow while in the milking stage. But it matures to a deep red color that adds beautiful red flakes to the ground product. Once ground, Jimmy Red Corn has a rich, sweet taste that is the gold standard for red corn. In addition to grinding, Jimmy Red is a great corn for roasting fresh. Plants have great vigor in a wide variety of growing conditions and produce two ears per stalk that are 10-12" in length.
