The Strawberry Lemon Marmalade | Canning Recipe

  • Welcome to 1870s Homestead! I'm excited to share the recipe for a delightful Strawberry Lemon Marmalade. This isn't your typical jam; it's a chunky, flavorful marmalade that blends the sweetness of strawberries with the tanginess of lemon. Perfect for spreading on toast, topping a biscuit, or even just enjoying by the spoonful! In this video, I walk you through every step, from prepping the ingredients to water-bath canning. We start with 4 cups of lightly mashed strawberries-each berry only needs a light mash to keep the marmalade chunky. Then, we zest and peel three lemons, aiming for about 1/4 cup of zest. It’s important to lightly peel to avoid the bitter white pith.
    Ingredients:
    4 cups of lightly mashed strawberries
    1/4 cup of lemon peel (from 3 lemons)
    Juice of 1 lemon (or more if you prefer a tangier taste)
    1 package of pectin
    6 cups of sugar
    Instructions:
    🍓Prep the Lemon Peel: Simmer the lemon peels in water for 20 minutes to soften them. Drain and set aside.
    🍓Combine Ingredients: In a pot, combine the strawberries, softened lemon peel, and lemon juice. Add the pectin and bring the mixture to a boil, stirring frequently.
    🍓Add Sugar: Once boiling, add the sugar and continue to stir until it returns to a hard boil. Boil for 1 minute, then remove from heat.
    🍓Can the Marmalade: Skim off any foam, then ladle the marmalade into sterilized jars. Clean the rims and seal with lids.
    🍓Water Bath: Process the jars in a boiling water bath for 10 minutes. Let them sit in the water until it stops boiling, then remove and let cool.
    Each batch yields about 7 jars of delicious marmalade. I love to keep a few jars for ourselves and share the rest with friends and family. If you’re new to jam-making, remember to stick to single batches for the best results-doubling can affect the set of the jam 🍓

    I just told my husband yesterday that I'm done making jams and jellies. Last week I made strawberry rhubarb and blueberry and this weekend I made apricot and cherry preserves. I probably have enough on my shelf that will last us 10 years at least...but I have everything I need to make this so...lol

      I buy plain, full fat Greek yogurt and use my jams and some granola for a quick breakfast.

      @@wendyellis6402 I should try this for sure. I make yogurt about every 2 weeks and put on top of blueberries and top with my homemade granola. I'm sure the jelly at times would be a nice change.

      I have a Mennonite recipe for marmalade that calls for 1 orange, 1 grapefruit and 1 lemon. Great recipe....makes about 11 250ml jars.

    I didn't know to do single batches of jelly😮 I have just cooked down till it's thick on a plate. But I am not singing pectin, I use lemon juice, I just did a double batch of strawberry yesterday. I guess the secret is to add ten to fifteen minutes of cook time to thicken. I did all batches this way last year also. My jams n jelly's have all set. The extra in the fridge I had on toast this Am was set. 😅

    I never use pectin in my jams. Lemon is pectin. I put pint and pips in a muslin bag and that is the pectin 😊.

    Thanks for this recipe, it looks like something I would love! Im going to try it next time I make jam. I wonder if you saved the lemon boiling water? I wonder if it would make a good cleaning solution mixed with vinegar? So good to hear you retired. I did in 2018, and am really enjoying my 60s stress free! As long as I dont obsess about my bank account, that is😁

    You could probably grow lemon trees at your location. I have a few that I grew from seed. One has been in the ground and the others in pots. It freezes here, and they have lost their leaves and frozen, but all have come back in the spring. None have produced lemons yet, after 8 years, but we shall see.

    Looks so yummy!! Do you guys spray your strawberries or no? I was surprised when asking at a local farmstand, they said they have to spray for mold. I just want them raw, of course!😊

      Mold? I never saw that in the 30 years growing them. Just have to cover with mesh. Deer like the leaves and the rodents like the berries. Squirrels and chipmunks and an occasional mouse. Never saw mice til a cat got a couple.

    New to making jams and jellies here! Is there a certain kind of pan that showing be used such as stainless steel or enameled cast iron? I’ve heard some say a non reactive pan. Not sure what that is. Can you clarify? Thanks so much. I really enjoy your videos.

    I have never used pectin in any recipe... my grandmother did not... recipes included fruit, sugar, and lemon juice for a basic recipe. Each fruit has its own pectin... did you know that... and all my jams set perfectly 😊

    I made this last weekend and the jars that went into the canner, all of the solids floated to the top. Is there a way to keep them floating throughout (the partial jar that went into the fridge didn't separate)?
