This is Behind the Counter at Momoyaki Momo chan, a Japanese charcoal grilled chicken izakaya restaurant with a truly authentic local vibe, tucked away in one of the backstreets of the Sumiyoshi area in Hakata Fukuoka Japan. Aoki san started the shop 10 years ago after working separately as a restaurant manager. With over 28 years of experience in the food industry he decided to challenge himself, start his own business and follow his dreams. He strictly uses only Satsuma Chirandori chicken raised in Kagoshima. These chickens undergo an extensive 450 day free range rearing process which allows them to fully mature naturally and develop their uniquely rich flavor characteristic and exceptional plump texture. He uses a chicken oil called CHIYU in Japanese to grill the fire chicken and Ogatan, a charcoal relatively inexpensive but produces a strong flame which unlike more expensive charcoals produces his signature blacked chicken with a richer and smokier flavor.

2:09 - what are those orange/yellow balls? egg yolks?
just got the mild sauce it's even tastier I use on everything tried with rice it's so good
The intestines are egg shaped!?
when he said 100 push-ups I thought he was going to ad "100 sit-ups, 100 squats, then a 10k run" lol
Hilarious!
Glad I'm not the only one who immediately thought of Saitama when he said that
HAHAHAHHAHA One Punch Man đđđđ
A couple more years and all of his hair might fall out. He will be a transformed man by then.
Solo leveling
I LOVE that you document both the large and small establishments. Going through each one of them really makes me feel like I'm experiencing Japan through you.
You are new here only 3 months and you are already watched all of his videos đź
@@sarahrean7174 nah, he means that he is keep watching videos and seeing different kinds of restaurants, not watched every of them already.
@@sarahrean7174 I have an older account on another device.
I feel like this man would make a reliable uncle who gives you profound advice when life becomes a bit too much
When a burnt wall is an acceptable part of the restaurant aesthetic, you know the chicken is good.
That 80yo mom, leaving the shop alone, backup, so old yet so strong. amazing...simply amazing.
She's 85, actually.
@@ChickensAndGardening WHAT! WOAH, THAT MAKES IT EVEN MORE AMAZING.
- The way he waved to bye his mom
- The way he said when he asked, 'is it hard to do all the things alone?' (it's harder on the customer to wait for me)
- The way he said his coach can do 100 pullups but he can do only 5
He is a good heart man and so humble, that's why his food tastes good.
Yeah right, a humble Japanese man tells you he's not that good at karate. Translation, he'll knock your head off as you blink
Hahaha exactly my first thought.
Thought the same thing. 15 years of karate.... in Japan,. He's good. But he measures himself with others younger and better than him.
Kyokushinkai for the win!! Haha
@@NicolasdeFontenay He is Japanese, it's a cultural thing to be humble to the point of downplaying your skill.
He runs EVERYTHING in his restaurant from being the owner, the cook, cashier and even the bouncer đđđ
I love that there's charcoal smoke evidence right on the building. It adds to the umami, for sure.
yeah fr
These need to be longer! Its too good to be this short!
Also I personally love seeing/hearing more of the customers interviews
When uncle said he used to flee from challenges I could relate so much, but seeing his hardwork now inspires me to be constant as well. Truly appreciate that now he's so passionate about what he does that he doesn't even think about retiring. It's a remarkable quality in Japanese people. Also chiyu is so tasteful, anytime we bake chicken tights I use the rendered chicken fat to eat with rice and some peppers. The chicken broth boiling for 10 hours or more made me drool. Just love long-time cooking broths! Wish all the best to uncle and Paolo's family â€ïž
I don't personally agree with the idea of running from challenges. It sounds to me more like everything he tried to do simply wasn't for him.
It's pointless to work with something you don't burn for. You'll do a poor job and only take up the spot for someone else.
I've never heard of Fire Chicken before, but oh my god, I am HUNGRY for some Fire Chicken now. It looks INCREDIBLY delicious.
Thanks for always working hard, Paolo. It's crystal clear that you love what you do, and it makes us viewers happy to see you happy. It's infectious!
I love the effort you put into your content, and it truly shows in your Behind the Counter series.
What an awesome channel, you and the people behind the scenes deserve so much praise.
This is perfect for when I go to Fukuoka in a month! Japanese chicken is the best!!!! đ
Ikr.
I'm jealous! Eat lots of good food, especially the Fire Chicken!
don't forget Fukuoka ramen.
@@BakaTacojtkueđđ
I just love how minimalist japanese people are
They focus on the important things of life.đ€
You know you've found the right charcoal chicken spot when the entire front facade of the building is blackened by fire
1:25 - that parking garage is spotless !
wish north america could learn something from them
Looks good! Kind of a smokier version of what we have here in Mie, where I live. We similarly cook it on a metal ânetâ grill over a flameâŠbut less dramatically so. Sweet miso sauce marinade is most popular. (In spite of our area being famous for wagyu, grilled chicken is what local people actually eat here.) Anyway, great content as usual, Paolo. đ»
Thank you for the insightful comment.
Each region of Japan has such amazing food. Jordan, maybe you should make more videos introducing food in your area, rather than always focusing on beer. Just an idea.
@@PaolofromTOKYO đ»
My Japanese friend from Mie took me there. Even though that shop is located in such a weird place, where there is nothing near by it was full 15 mins by opening.
Always happy when I see a paolo from tokyo notification on my phone. đ€ you guys are the best
Hi From Panama! I love your videos and always use them to teach English to my Students!
that's awesome
I really admire all the work and enthusiasm jappanese put in their shop or job. They make their daily jobs seem more interesting and also very authentic. â€
1:08 Aoki-San should modify his exhaust hood so the smoke doesn't stain the front of his building.
Oh man, Iâve been waiting!! I like the way they make their chicken in a unique way. Hopefully Iâll get to visit there one day.
Looks like the building might have tasted a bit of that fire before, but i do bet that his chicken tastes awesome,
Awesome video as always Paolo. These family owned and operated restaurant is so amazing and the food looks so delicious.
Iâm really aspired to be like this one day. One man show running a restaurant, with only few customers at one time during the evening. This guyâs composure and confident is beyond anybody I know. đđ»đđ»
"I respect young people's ideas. It's better than the ideas coming from my old brain."
This actually means a whole lot coming from a man who said that he messed around a lot as a kid. He could easily think that young peoples' ideas are rubbish based on how he was, and he'd find plenty of people to tell him he's right. But he chooses differently. Good on him, and God bless.
Excellent video as always. Without a doubt you are the most informative and objective video producer on Japan. Even though I have a Japanese wife and have visited Japan 7 times I'm still learning from you. Your video production is top class unlike others with unnecessary childish b rolls and side camera angles with people talking off camera or their heads way too much in the shot, you produce an extremely professional finished product and that's coming from another pro video producer who used to do weddings and music vids etc. Keep up the good work as you've been doing them and hopefully you don't run out of subjects. The thumbnails are great too by the way.
Thank you for such interesting videos!
We need more of these videos. I look forward to them so much!
I love watching videos of these small little food shops. So much love goes into the food.
LOVE this videos of yours. I'm also a big fan of the interviews with the customers because they usually provide great insight as to what others think of the shop.
What a wonderful way of seeing the world. Thank you so much. Really appreciate your channel!
Love the small shops you visit.
Your videos are so well made, i love them keep the good work paolo!
Love these videos so much! You doing an amazing job Paolo đ„°
Love it!!!! Wish the videos are longer! Keep going!
I seriously love these videos âš There's something so authentic about them đ
these kind of videos are the best Paolo experience from Japan
I love these behind the scenes videos.
Thanks for the upload. Watching while eating breakfast!
Love your videos Paolo!
Really enjoyed this one.
Wonderful to see that Karate is still making better people each and every day. Osu!!
I love the way you edit your videos. Asking the question in english and good subtitles after. You deserve all your success. Have a blessed day brother
I like the good vibes in this videođ The way you present it and the inviting vibe in the restaurant đ
Looks amazing. I love your videos.
This guys is a role model! †Amazing!
I loved watching this video definitely one of my favorites I wanna visit Japan someday
WE NEED a video on favorite indoor/mall restaurants, LAST time I was in tokyo it was 98 degrees...walking around was murder and last thing I wanted was hot food on the street. Thanks!
Hat's off this man. It's just so great to see him enjoying what he does and have is cooking well appreciated. This video is too short! Really enjoyed hearing him.
Nice video, Paolo. Keep it up!
looks so delicious
Just seeing the char on the outside of the building lets me know itâs delicious.
perfect video while eating dinner, keep it up!
Yay @ Team Paolo in Tokyo!! I get so happy when I see a new notification!! Keep up the great work â€đ
There's "Fried chicken" and then there's

The thing about this chicken is it looks so authentic. Plain sure but you know it'll taste fantastic.
behind the counter is my favourite video â€
I really really love these videos! I'm hoping to take a trip to Japan with my husband in November so I've watched all of your guide videos and I recently started watching these behind the counter videos. They're so fun and interesting! I'm not sure if this would even be possible since you live in Tokyo, but I would love to see some restaurants from Osaka or Kyoto in one of the behind the counter videos as well. If that's possible anyways. Keep up the amazing work! Thank you so much for sharing these wonderful insights into Japan
nice, going to fukuoka on our trip in october. I will try to visit his shop! looks great and local feel.

Yes another behind the counter đ
Paolo you are the best bro...this is legit content
Paolo! Haven't seen any Made in Japan video about Japan's confectioneries. I think they're huge in Japan. And yeah you always feature Bokksu so maybe a made in japan or behind the counter video about that? Looking forward to watching it đ

Stop the mom leaving was so adorable loll
Such a nice cozy feeling in this shop. A man doing what he is passionate of and with his sweet mom helping out. Almost like one of those all-nighter shop where everyone knows each other.
Honestly, if I ever plan to visit Japan then your channel will save me a lot of time and effort with my itinerary. â€
Sumibiyaki in the Miyazaki area is one of the most unique and best tasting chicken dishes Iâve had. Thanks Paolo for featuring this dish and this chef.
