Many people have said that this song is about having a crush on someone who is out of your league. One person said that it is about someone who is in a relationship with a very popular person, who is perceived as "perfect" and whom "everybody wants."
But I think differently. This song gives me very strong enemies-to-lovers trope vibes. There is a clear mood of resentment in these lines, especially the lines "Everybody wants you, everybody wonders what it would be like to love you." The narrator denies her feelings for this "perfect" person ("I don't like a gold rush") and usually keeps her head down low, preferring not to attract attention to herself. The person she is singing about, however, is popular and loved - people flock to them like it's a gold rush. This is a classic example of the enemies-to-lovers trope, in which the two people are sometimes exact opposites, constantly contradicting each other. This is also shown with the line "At dinner parties, I call you out on your contrarian shit" - "perfect" is probably very loud and talkative, and maybe has controversial opinions. They come across as charming and charismatic to most people, but the narrator sees through their facade and pokes holes in their statements.
"I don't like anticipating my face in a red flush" - The narrator is hesitant to rush into falling in love. She has likely had previous experience with love, and she doesn't like letting her face flush red; this may also represent the general signs of a crush, such as wanting to be around the other person all the time and thinking about them a lot. The narrator is probably used to being a loner.
"I don't like that falling feels like flying till the bone crush"- As I said, the narrator has had experiences with love before. She knows what falling in love can be like, and she has probably had bad experiences with rushing into romance. She is probably afraid of betrayal if she makes a move with "perfect."
"What must it be like to grow up that beautiful? With your hair fallin' into place like dominoes" - A this point in the song, the mood changes abruptly from resentful denial to a sort of wistful adoration. The narrator has begun to develop feelings for "perfect." This is also reflected in the beginning and end, with the lines "Gleaming, twinkling, eyes like sinking ships on water, so inviting, I almost jump in" - she has begun to let her guard down. She "almost jumps in" to being in love with "perfect."

The beauty I think she’s referring to here is inner beauty as well as outer beauty. We all know that one person, who is well liked without trying to be, who when you talk to them, they make you feel special. One thing unique about Taylor from most pop stars of the recent past is that she writes all her music so overtime she actually becomes a better writer and her music gets better and better. I’ve noticed other pop stars get older and their music gets worse because they had beauty and singing talent and then sang others songs. Beauty and singing prowess can fade with age, but a skill of the mind like writing gets stronger. For maybe the first time in history, we get to watch a female artist get better with age.
I think that this might genuinely be the greatest songwriting I have ever encountered.

It took me a few listens to realize this song is kinda sad. She doesn’t like the gold rush - everyone flocking to this person that she loves. But everybody loves them. The song progresses into her daydream about having the greatest love with this person, but it fades into her “day old tea ‘cause it could never be.” This is a song about a daydreamish unrequited love that will never come to fruition. 😔

She says that falling in love, then feeling like your flying when you are in love, is okay, until your "bones crush",that is your heart breaks. She imagined that the world would never see a love as pure as theirs. But none of it is possible. But she knows that the person is classic. Wanted by everyone. Woah. Something we don't talk about enough is the progression in her lyrics. It begins with her dreaming of that person until she realizes it's not worth it even though they are desirable and beautiful. So, she lists the reasons she does not see a realistic future with them. The ending is such a beautiful, nostalgic, and tragic conclusion. I actually find it sad even though the beat is energetic:(
