Why lightsabers turn off automatically when dropped in the movies:
Perhaps because a Jedi uses the force to turn on a lightsaber and keep it activated. Maybe. I don't really know, that's just my guess. I know it doesn't explain why a ex-stormtrooper without the force like Finn was able to use a lightsaber, but honestly, Star Wars has so many plot holes and questions without legit answers that it's easier to just not think about it and move past this topic.

You would think Rick would implement a remote device to deactivate a lightsaber, or at least safety bars on the side to prevent a vertical lightsaber falling forever
This is why power tools in real life have a safety shut off switch. Sometimes it's an idle timer. Sometimes it's analog... if you let go of it, it turns off. Same thing with Jet Skis and the like. You wear a little key lanyard so that if you go flying, the Jet Ski doesn't keep going. You fly away, the key flies away with you. This is a fun episode and premise, but I highly doubt the most basic safety feature wouldn't exist on something so intricately futuristically awesome.
A lightsaber is activated by holding it and pressing a button at the same time. So it won't run wild while it's running.
