when i smoked my beef ribs bark didn't form, but this separate layer of hard skin almost that peeled off the meat and i couldn't cut through it even. why has this formed?

When are the Ribs good? Grainfed? Grassfed? Specific "brands"? Tried it to times with "makro" beefribs, but i'm not excited about them Yet! Had them in a BBQ place once.. and they where amazing. Tips please😉🤙

My first smoke was beef ribs and....they were forgettable. Very disappointing after success slow cooking them in the oven. My 2nd attempt on the smoker will be better after watching this video. Yes you should trim the top a little especially the silver skin. The the bottom bone side alone.
