100 Korean Kimchi Dumplings - Family Recipe!

    2 tbsp extra virgin olive oil
    2 cups sliced shiitake mushrooms
    2 tbsp soy sauce
    1/2 red bel pepper, rough chopped
    1 carrot, rough chopped
    1/2 onion, rouch chopped
    2 stalks celery, rough chopped
    4 green onions, rough chopped
    1 small yukon potato, rough chopped
    1/2 zucchini, rough chopped
    1/4 cup chopped garlic chives
    3 cloves garlic
    1 cup kimchi
    1/2 tsp MSG (can sub in salt)
    black pepper
    1 1/2 cups cooked vermicelli noodles
    2 blocks super firm tofu
    1 tbsp toasted sesame oil
    100 dumpling wrappers (more if you make mistakes like I do!)
    Oil for frying
    Spicy Garlicky Soy Sauce Dressing ( • The BEST SAUCE EVAR (r... )
    1. Add 1 tbsp of EVOO to large sauté pan over medium high heat. When the oil begins to shimmer (about 1 minute), add sliced mushrooms. Cook for about three minutes, until they begin to brown. Add 1 tbsp soy sauce. Cook for an additional 2 minutes. Set aside.
    2. Add 1 tbsp of EVOO to same pan and when oil begins to shimmer, add the remaining vegetables, including kimchi. Season with msg (or salt) and black pepper. Cook for 3 minutes until liquid starts to collect. Reduce heat to medium and cook until liquid is completely gone (about 10 minutes). Make sure to stir regularly to avoid burning (though, a little char wouldn’t be amiss).
    3. Place all the veggies, along with cooked vermicelli into a food processor. Grind until you achieve a thick paste like in the video. Then add tofu using your hands or a potato masher. Add sesame oil. Season with more salt (the flavors SHOULD be aggressive-they will diminish during the cooking process), as necessary.
    4. Wrap according to your preferred method. Cook according to your preferred method.

    Joanne, I came to know of you only because of RR's podcast. For whatever it's worth coming from an intentional luddite and former brand strategist, I find your unique vlogs to be deeply nourishing ... on so many levels. I'm one of the 3% who did not grow up in that Korean paradigm of food = love and that custom of having one's fridge always brimming with banchan is something I have always envied. I am learning to make my own and in that solo process, discovering an overlooked heritage.

    I've never gifted my dumplings, mostly because it takes SO long to fold and wrap them. I've certainly shared them in my home over a meal but dang, I hadn't thought of making oodles of them for gifting. I'm going to think on that.

    thats so smart that you saute the veggies before blending them in the food processor. I've tried blending veggies first and then sauteing them and they release so much water that they never brown lol. imma try this method

      ahhh--yes, I can imagine. It would turn into a soup, lolol! cooking the liquid down does take a little more time, but I think it's worth it. That way you can inject flavor up front while still maintaining a nice, paste-y consistency!

    The MSG hate is something I don't understand. MSG is naturally occurring in a bunch of foods. Foods that people likely are eating without realizing it's in there. It's a salt just like table salt. If you salt your food and think MSG is bad for you then you're misunderstanding what MSG is or does. It's an amazing cooking tool.

    I LOVE Kimchi Dumplings!! I have always some in my freezer but they're store bought.
    I always wanted to make some by myself and I love this recipe!
    I would use the first method because my carpal tunnel syndrom is super bad and it hurts pretty fast.
    Do you guys think I could use a Ravioli-Maker for this? (Please Italians, don't hate me!)
    I think it would be so much more easier for me and my hands..

    It is absolutely impossible to get dumpling wrappers here. If I want dumplings, I have to make the wrappers myself. Of course there are lots of recipes, but I've liked everything you've made so far, so a recipe for the dough would have been great.

    So... I'm watching this reminded of an obsession I had this past summer with making homemade ravioli and tortellini by hand, and could not help but wonder if those Italian staples are really dumplings being called something else?

      A lot of different cultures/areas make the same preparations of foods but with different regional ingredients. I'd definitely consider ravioli a dumpling or a dumping a ravioli.

    My comfort in loved ones lost to this side of eternity is the hope of Heaven and seeing them again. The hardest losses are those where I don't know if they hadn't a relationship with Jesus Christ or not/not knowing if we will see each other again. That hurts, for me, far worse than the temporary (yet still acute) separation of the length of this earthly life without them.
    I am so ready to try these-esp going into a soup this time of year!
