Being quick and easy, we very often cook eggplant burgers this way with grated bread, parmesan, an egg, garlic and oil. A recipe that the whole family will love. Ingredients to prepare 6 eggplant burgers:
• A 550 gr. Eggplant
• 100 gr of breadcrumbs
• 40 grams of Parmesan cheese
• An egg
• Small clove of garlic
• A little parsley
• About 5 tablespoons of extra virgin olive oil
• Salt

My favourite vegetable. Eggplant or brinjal or aubergine.... very nutritious and has antioxidents (purple in colour). Delicious recipe. Can also add chillie and cumin powder. Can add lemon juice OR white vinegar with a half teaspoon of sugar. Greetings from Melbourne.
