I was told to add the saffron earlier in the process for soups and stews (around when you add the stock). If the fish only takes a few minutes to cook, is adding it at the end enough time for the saffron to infuse in the stew?
I thought the same, adding it at the end is a waste of saffron. Maybe it was some sort of weird flex..?

If you're talking about the "red" herbs at the near end bruv, that's "Saffron"
Pro tip: dump those herbs soon after adding the stocks
