Special Kheer & Puri Paratha Recipe by Food Fusion

    Recipe in English:
    Ingredients:
    Prepare Special Kheer:
    -Pista (Pistachios) 3-4 tbs
    -Badam (Almonds) 3-4 tbs
    -Rusks (Papay) unsweetened 4-5
    -Chawal (Rice) Tota 1/3 Cup (soaked for 1 hour)
    -Doodh (Milk) 1 Cup
    -Doodh (Milk) 2 litre
    -Sugar ¾ Cup or to taste
    -Elaichi ka danay (Cardamom seeds) crushed 1 tsp
    -Barfi 100g
    -Kewra water 1 tsp
    -Chandi warq (Edible silver leaf)
    Prepare Puri Paratha:
    -Doodh (Milk) ½ Cup
    -Anda (Egg) 1
    -Ghee (Clarified butter) melted 2-3 tbs
    -Namak (Salt) 1 tsp or to taste
    -Sugar powdered 1 & ½ tbs
    -Lukewarm water ½ Cup
    -Sooji (Semolina) ¾ Cup
    -Fine atta (Fine flour) sifted 3 Cups
    -Cooking oil for frying
    Directions:
    Prepare Special Kheer:
    -In a grinder,add pistachios,almonds,chop coarsely & set aside.
    -In a blender jug,add rusk,rice,milk,blend coarsely & set aside.
    -In a wok,add milk & bring it to boil.
    -Add blended paste,mix well & cook on low flame for 12-15 minutes & stir continuously.
    -Add sugar,cardamom seeds,mix well & cook on low flame until sugar melts (2-3 minutes).
    -Add barfi (crush with the help of hand),mix well & cook for 2-3 minutes.
    -Add kewra water,2-3 tbs of crushed dry fruit (reserve remaining for garnishing) & mix well.
    -Takeout prepared kheer in clay bowls & garnish with crushed dry fruit & edible silver leaf.
    -Refrigerate until chilled.
    Prepare Puri Paratha:
    -In a bowl,add milk,egg,melted clarified butter,salt,sugar,lukewarm water & whisk well.
    -Add semolina,fine flour,mix well & knead until dough is formed.
    -Knead dough again until smooth & grease with melted clarified butter.
    -Take a small dough (140g),grease with melted clarified butter & roll out thinly with the help of rolling pin (12 inch in size).
    -Make small cuts on rolled dough with the help of knife.
    -In a wok,heat cooking oil & deep fry puri paratha on medium flame until golden & crispy (makes 6-8).
    -Serve special kheer with puri paratha!

    -Grinder mein pista aur badam dal ker coarsely chop ker lein & side per rakh dein.
    -Blender jug mein papay,chawal aur doodh dal kar coarsely blend ker lein & side per rakh dein.
    -Karahi mein doodh dal ker ubal lein.
    -Blended paste dal ker ache tarhan mix karein aur halki ancch per 12-15 minutes kliya paka lein aur musalsal chamcha chalatay rahein.
    -Cheeni aur elaichi ka danay dal ker ache tarhan mix karein aur halki ancch per cheeni ghul janay tak paka lein (2-3 minutes).
    -Barfi (crush with the help of hand) dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
    -Kewra water aur 2-3 tbs crushed dry fruit (reserve remaining for garnishing) dal ker ache tarhan mix ker lein.
    -Tayyar kheer ko kunday mein nikal lein,crushed dry fuit aur chandi warq sa garish ker lein.
    -Thanda ho janay tak refrigerate ker lein.
    Prepare Puri Paratha:
    -Bowl mein doodh,anda,melted ghee,namak,cheeni aur neem garam pani dal ker ache tarhan whisk ker lein.
    -Sooji aur fine atta dal ker ache tarhan mix karein aur ghond ker dough tayyar ker lein.
    -Dough ko smooth hunay tak dubara ghond lein aur melted ghee sa grease ker lein.
    -Chota dough lein (140g),melted ghee laga lein aur rolling pin ki madad sa thinly bail lein (12 inch in size).
    -Rolled dough per knife ki madad sa cuts laga lein.
    -Karahi mein cooking oil garam karein aur puri paratha ko darmiyani ancch per golden & crispy ho janay tak fry ker lein (makes 6-8).
    -Special kheer ko puri paratha ka saath serve karein!
