- My parents used to own a Chinese restaurant, and one of the very few pastries we sold was almond cookies. When no one was looking, I would steal one and eat it. 😅 This flaky, crunchy, yet soft shortbread like cookie is one of my favorite memories of my childhood. This cookie is traditionally made with lard and only all-purpose flour. I modified my dad's recipe by replacing it with butter and adding almond flour. I hope you like my version of this traditional Chinese cookie.

【Ingredients:】
Almond Flour - 100g
All-Purpose Flour - 90g
Butter - 100g
Sugar - 50g
Egg - 1
Baking Powder - 2g
Baking Soda - 2g
Almond Extract - 1/2 tsp
Bake at 375F for 15-17 minutes
【材料:】

蛋 - 1只
泡打粉 - 2克
苏打粉 - 2克
杏仁精 - 1/2 茶匙

I just made this! Subbed toasted ground almonds because I did not have any almond flour. It works! Really lovely texture. With 50g of sugar I did not think it was sweet enough, I’ll increase the sugar slightly next time I make it. Thank you for sharing your recipe!
I rolled mine in raw sugar b4 baking....so sweetness just right but yeah it's not an overly sweet recipe. But such a light airy one!

Can you use only almond flour?
I have never tried using only almond flour, but I think it can work. The only issue is almond flour doesn’t have any gluten, so the cookies will be softer and they may not hold up as well.
Written recipe says bake at 375, video shows 325….which is it it makes a big difference
Do these freeze well?
I’ve never froze them, but my guess is the dough should freeze well. It's probably best to roll them into balls first, then freeze them. I usually do that with my chocolate chip cookie dough 😊
Hi! Can I use cake flour or regular flour instead of almond flour?
Yes, you can definitely replace it with regular all-purpose flour. The traditional recipe uses only all-purpose flour. Almond flour just makes it a bit softer and nuttier. I’ve never used cake flour for this recipe, but it should work. Cake flour has a low gluten content that is similar to almond flour (gluten-free).

325华氏度是不是160 c度
对,325°F是160°C。可是烤杏仁酥要用375°F,也就是190°C。
那到底是焗160度攝氏或是190度攝氏呢?因為你的影片內是寫烤325度華氏(即160度攝氏)
