Hello.. fellow Singaporean living in Italy.. for the carbonara.. mix the cheese with the egg (one egg per person), some pasta water.. set it aside. Mix your pasta with the bacon, SWITCH OFF the fire and add in the cheese mixture. If too dry, add pasta water
I would level up that Panna cotta by cooking the berries in the balsamic vinegar and let it reduce to a sticky syrup. Balsamic vinegar is sour, but has some sweetness to it, so when you reduce it, it will produce a sweet sauce that is slightly tangy, which works well with the berries.
I actually tried one version where I put lemon juice and zest for the panna cotta mixture. It was BOMBS! Imma try your suggestion for the balsamic vinegar reduction :))))
A big hack for the carbonara is to beat the cheese into the egg first, add a small scoop of pasta water into the cheese and egg mix, beat well so the egg is tempered. Then add it into noodle-bacon that is OFF THE STOVE. Don’t even leave it on the stove which just had the fire on, you’re still introducing heat (as you saw in the panna cotta over-boil bit, he turned off the fire but it continued boiling until he removed it and then it immediately stopped). Let the residual heat from the noodles half-cook the egg and melt the cheese to bind into a creamy sauce. And once you add the cheese-egg to the noodles, mix everything together IMMEDIATELY. With tongs, not just the tossing action. This is I think the second TSL video where they did carbonara but failed. A for effort but maybe seek out tips to make it work before you guys make this vid a third time. Good luck!
You should have turn the gas off and add the eggs in right before you are going to plate the pasta. That way you won’t have an egg noodle😂 and have a creamier carbonara
Cut your tomato smaller and take the pan off the heat before adding the egg!!! If you want your pasta to have more flavour add white wine and chicken stock to your pasta!!

Your flame is too strong that's why the cream bubbled like that. You should at least stir it with a spatula or a wooden spoon. You're only adding gelatin so don't need a strong flame.

PlayFood to be honest.. there’s no onion or balsamic vinegar in the bruschetta as well 😂 but it’s all down to personal taste I guess.
