I disagree with you. I would prefer to hire talented meat cutters but there aren't any applying. Machines also require a team of technicians to maintain them, and they cost more than professional butchers. As an employer, I can't win.
I used one of these when I worked at Sams club.
it's cool and efficient and great at what it does, but kinda takes the fun out of cutting.
