Today we're making pasta and peas (pasta e piselli) in red sauce. This was a rare 10 from the taste tester and imo totally warranted. There is no better dish than this one when you're in the mood for something easy and cheap. I hope you enjoy this pasta and peas with red sauce recipe!

INGREDIENTS WITH GRAM AMOUNTS (Gram amounts are estimates)
Ingredients
1 pound (454g) ditalini or tubetti
½ cup (120g) extra virgin olive oil
1 large onion - diced
½ teaspoon crushed red pepper flakes
1 6-ounce (180g) can tomato paste
4 cups (960g) water - plus more as needed
1 teaspoon kosher salt - plus more to taste
12 ounces (354g) frozen peas
¾ cup (90g) Pecorino Romano - grated

A little trick that I do when i open those cans of tomato paste is I open both sides of it. It never leaks because it's so thick and allows you to use the bottom to push all the paste through instead of needing to use a spoon.
When I used to work at a restaurant, I would make big batches of sauce with big cans of tomato paste, I found if you poked two or three holes in the bottom of the can with the can opener and open the other side, you could shake the can swiftly once and all the paste would come out at once. It was rare I needed to use a spatula to get the rest out.
I've started buying tomato paste in the squeeze tubes. It's so much easier than using canned. You squeeze out only what you need and save the rest for another day.

Yes, this dish was a 10. As a fellow Italin American living in Florida and formerly from LI NY. This dish turned out great ! I just made one change. I used 1 cup of low sodium Chicken Stock and 3 cups of water. This one goes into my cookbook bible.
I also used chicken stock and I added a couple of anchovies when cooking the sauce - a secret weapon! I didn't need to use any salt and the anchovies add a richness of flavor without any fishy flavor whatsoever.
Yes that's true with the chicken stock. Try it with chick peas instead of peas too. Yum. I keep College Inn handy.

my mom used to make peas and pasta just like this when i was a little kid. i hated it cuz it was so difficult to pick out the peas and eat only the pasta. Now, if I see peas and pasta on a menu, you better know I'm ordering it!

This looks awesome! I remember going to the market during 2020 and there was NO pasta, beans, staple ingredients, etc. So glad things are available now, even though they cost a lot more.

I made this yesterday. It was the first pasta I have allowed myself in 2 years of keto living. Boy was it worth waiting for. Creamy, almost like risotto, I also added a few leftover San Marzano tomatoes and some Passata to the broth. It took a lot longer to cook with the DiCicco pasta, but again, no problem! The results were amazing! Especially with a generous amount of black pepper and Pecorino. Frying the paste is a game changer. Thanks so much for this wonderful recipe!

Cut both ends off the tomato paste can. Take the top lid off and push paste through from the bottom. 💜

Looks really good! I've never had peas with red sauce before, so I'll have to give this a try some time. Cooking was similar to making a risotto - a little liquid at a time. One thing I really appreciate about this channel is how accessible the recipes are. I now live in the Caribbean, so frankly a lot of recipe for Italian showcased by others channels just don’t work for me. Love it. I make mine in a loose meat sauce using medium shells pasta. They hold the sauce well and capture the peas and bits of loose ground meat inside them.

Sometimes it's just that addition of the unexpected that really makes a dish. My Italian landlady used to add peas to scrambled eggs. Peas in eggs...who does that? Well, she did and it was delicious! This dish looks right up my alley. I love tomato paste so when I saw you add the whole can, I smiled. Here's another simple and budget friendly recipe I'll be trying. Thank you!

I've been watching your videos for a while now and I had to jump into the comments to say thank you. My Nonna was an Italian immigrant and I grew up on her cooking. I miss it so much. Your Sunday Sauce recipe is almost identical to hers (she used neckbones and rib tips). I made it for my mother and she cried because it brought back so many memories. That's how close it is. I grew up eating pasta peas at least once a week. This is EXACTLY how she made it, I just wanted to jump on here and say thank you for bringing these recipes to everyone. Very grateful for that and I'll be making this later this week so my kids can experience it as well. Keep up the amazing work.

I just discovered your channel and absolutely love the easy, authentic dishes you make! I'm a green pea fanatic, and the only thing I would personally change is to put the peas in at the very end, cooking just one or two minutes until heated through. They stay bright green and really fresh tasting that way 🙂
