That looks so good… that’s the best looking bologna I’ve seen, and it’s a reasonably sized slice compared to the massive hunks people usually cut… on the thick side still but not obscene, I can only imagine how amazing it would be if you cut them thin and gave them a short time on the grill to crisp up and layered them on a sandwich with other goodies like some pepperoncinis, some pieces of grilled leek, chopped cabbage, that same mayo you used with some brown mustard on whole grain bread… some cheese too… provolone? I know I have a weird choice of toppings to some but that’s what sounds the best to me right now…

I'm Italian and that to me doesn't seem what we call "Mortadella di Bologna" just a bad imitation. You can google it and check for yourself, in this one there are no traces of "fat circles" which are typical of this product
I'm American and that does seem to be what we call "bologna". We call what you're describing just "mortadella" and also have it in our delis
@@voncornhole sorry but i've never heard or seen something called "Bologna" as shown in the video here in Italy. It seems something made in USA which has nothing to do with Italy except the name. The fact that it is smoked is a warning belle to me because here we dont smoke so many things like you do
