📌Crockpot Loaded Potato Soup Recipe:
-1 (2lb) Bag of diced Hashbrowns
-8oz Cream Cheese, softened
-1 can Cream of Chicken Soup-32oz (4 cups) Chicken Broth
-1/2 packet of Ranch Seasoning, i use 2 Tbsps.
-half of a 3oz bag of Real Bacon Pieces
-4 oz (1 cup) Shredded Fiesta Blend Cheese
***To the crockpot add Hashbrowns, Cream Cheese, Cream of Chicken Soup, Chicken Broth and Ranch Seasoning. Cover and cook on HIGH for 3 hours. Add the Bacon Pieces and Cheese, then stir. Put the lid back on and let continue to cook until the cheese is melted.
📌Crockpot Creamy Chicken Taco Soup Recipe:
-1 1/2lbs. Boneless, Skinless Chicken
-1 (10oz.) Red Enchilada Sauce (you could sub for tomato sauce to reduce sodium)
-1 Pinto Beans, rinsed and drained
-1 can Chili Beans, undrained
-1 can southwest corn, drained
-1 can Rotel, undrained
-1 packet Taco Seasoning (you can use "less sodium")
-1 packet Ranch Seasoning
-1 packet Fajita Seasoning (you can omit if you want)
-2 1/2 Cups Chicken Broth ( you can use low sodium OR just water)
-8 oz Cream Cheese
***Add everything to a large crockpot and set to cook on LOW for 6 hours, or until Chicken is cooked through. When chicken is done, remove from crockpot, shred, then add back into the soup. Serve topped with sour cream and shredded cheese. ENJOY!
NOTES: If you'd like a thicker soup, you could reduce the broth to 1 Cup OR you can completely omit; But, if you reduce/omit I suggest also omitting 1 seasoning packet to cut down on sodium.

I love adding to my crockpot recipe collection from this Crocktober Collaboration. My favorite soup is Chicken Fajita soup but I haven’t made it yet. I usually get it when eating out. I need to make some along with your taco soup. I love your recipes as always.
Valerie, everything looks so delicious and these are perfect for when my daughter and her family come to visit. I usually dissolve the cream cheese in the broth half a block at a time in a separate bowl but without using the mixer, a whisk should work well. It was fun getting to collab with you again! ❤❤

Stuffed pepper soup is my family's favorite!
Stufed pepper soup
2 Ibs ground meat
1 yellow pepper
1 orange pepper
1 red pepper
1 green pepper
1 onion
Chop all
6 cans tomato soup
5 cans water
1 can beef broth
2 sm cans of tomato sauce
2 tbs of brown sugar
3/4 cup uncooked rice
Saute all peppers and onions. Add ground meat
and brown.
Add remaining ingredients. Cook until rice is
cooked.
Potatoes soup looks so good as fall is setting in here in MI.
These soups looked amazing! One of my favorite soils is a Creamy Cauliflower and Ham Soup! It’s so good!

I love a good hearty cauliflower soup. It’s fairly easy and simple almost like your potato soup but instead of the bacon and cheese and all that other stuff you would add in the veggies and cauliflower, dill weed and at the end you would add whip cream! There’s a lot of different variations of cauliflower soup

Yummm! So easy. Have you tried split pea soup with a ham bone and ham? My favorite from childhood.
I think it was watery because instead of the frozen coirn, canned corn with the water was added. Ckn & dumplings is by far my fave. Different video.

I love potato soup! The chicken soup looks really good! I know what you mean about the little chunks of cream cheese that never wants to melt. Honestly, my favorite soup is probably just a good ole chili. But I do love potato soup!

It’s the brand of cream cheese you’re using. I find out the generic store brand does that but if you got the Philadelphia one it won’t do that.
Why don’t you try adding all of your liquid with your cream cheese till it’s all smooth and silky and then poured in your crockpot🤷🏻♀️
BEST INSTANTPOT BEAN AND HAM SOUP
JUST BEFORE YOU GO TO BED... in a small InstantPot (I use the DUO size and it's perfect!) add one large smoked pork shank, 1 pound dry Cannellini beans (do not pre-soak), 1 teaspoon baking soda, 1 tablespoon kosher salt, 2 teaspoons pepper, two large bay leaves, 1 tablespoon dried savory (the BEST herb for beans!), and enough cold water to fill to the fill-line. Seal and cook four hours on the regular ol' Pressure Cook setting (high pressure) and just let it keep warm and release all pressure until morning. If you use a larger InstantPot or another brand of pressure cooker, use enough water to cover beans by two inches.
After you've awakened from brilliant dreams, drain off any liquid from the beans while you make your morning beverage of choice. Discard bay leaves, pick out any bone and icky bits as you shred the shank, and place the meat and beans into a fridge container. Refrigerate until about an hour and a half before serving time. I like to do the "pig pickin'" while the shank is still warm because it kind of gives me the creeps to do it when it's cold - not sure why! If you can't find a nice big shank, two smaller hocks are a good substitution but be warned - hocks tend to be a lot fattier than shanks!
An hour and a half before you're ready to eat, ready the second part of the soup: 3 cups diced carrot, 2 cups diced celery, 2 cups finely diced onion, 2 cups chicken broth/bouillon, 2 cups ham broth/bouillon (or use all chicken or all ham), 1 teaspoon MSG (optional but really makes a difference!), 2 teaspoons dried savory, 1 bay leaf, 1 large or two small cloves sliced fresh garlic or 1 1/2 teaspoon pre-chopped garlic, and either half a teaspoon pepper or a few shakes of your favourite hot sauce. Seal and cook 30 minutes in the InstantPot, then use the quick release function. Add the beans and meat to the pot, reheat using the saute function, stirring frequently and mashing the beans a little on the side of the pot. The resulting soup should be nice and thick, almost creamy like the Loaded Potato Soup in this video. Add more broth if you find it's too thick for your taste. Finish each bowl with a few drops of your favourite vinegar or a shake or two of hot sauce to awaken the flavour.
**NOTES** This makes A LOT - you'll have plenty of leftovers, particularly if a nice cornbread is paired with this soup, and lots for freezing for a terrific quick lunch. A friend of mine likes to add a can of hot Ro-Tel to third-day leftovers for a spicy twist. * I hope you give this recipe a try - it looks difficult but it's really easy. The hardest part is not eating all the shredded shank before it's added to the beans! * Great Northern beans are good if you can't find Cannellini. Light Red Kidney beans will work, of course - Cannellini beans are just the white version of small red kidney beans - but I like to use white beans for bean soup and red beans for my Red Beans and Rice. No matter which beans you use, just make sure they haven't been sitting on a grocery store shelf or in your pantry for more than eight months or the skins get leathery and the insides get chalky. * Savory is a FANTASTIC herb suitable for all vegetables, seafood, and poultry, but it is simply outstanding for any bean dish - not only does it have a bright, fresh taste but its properties are said to greatly reduce the... aftermath... of eating beans. Savory is very easy to grow in containers that get at least six hours of full sun and consistent but not too much water. If it looks dry, just add a little more water and some compost. * Adding a tiny amount of an acid like vinegar, lemon juice, dry sherry, white wine, etc., can REALLY brighten and balance heavy dishes. Hot sauces, especially Louisiana-recipe sauces like Frank's, Texas Pete, or Tabasco, have a fair amount of vinegar in their recipes, but I prefer not to cover up the flavour of this soup with a lot of heat. * Feel free to add more soup-friendly veggies to this recipe. A rutabaga will not only make this dish stretch if you're making it for a crowd, but it's lower in carbs than potato. Peeled, diced parsnip adds a nice little zing and is a good way to try that vegetable if you haven't before. * I wish you a terrific 2024, full of joy and abundance!!
