    I save
    all the peels/tops/bottoms for a broth. Which gets strained. I also freeze all these cuttings for later use in a ziplock bag. I dehydrate onions

    I loved using and not wasting my veggies so much that I have 2 dehydrators. Looking to buy a couple more soon. I vacuum seal my results in small jars so they stay fresher. I often make my own seasoning mixes for soups and stews. Home dehydrated foods have better flavor in my humble opinion.

    • @StockingMyPantry

      I agree completely! While I do canning, dehydrating is my favorite way to preserve food. It is so easy to use them however you want, in whatever quantities you want. I love that you can make a single serving if that is what you need. I also like to store mine in vacuum sealed jars.

    We make veggie burgers with rehydrated onions, garlic, leftover beans or veggies, with some oatmeal and spices. I put the dehydrated veggies in a pot with a veggie broth and soy sauce. Season with garlic and add a good quality of sea salt. Add the leftover beans or lentils, and stir bring to a boil and add a cup of oatmeal. Use the metal ring from a canning jar to make the burgers on a greased cookie sheet. Bake at 400 degrees until firm but not as dry as an oatmeal cookie. Can be cooked longer if you need to make a vegan pemmican for hiking. Toast buns or eat with a salad for a light meal. We usually make about 20+ burgers and freeze them for when you need a quick dinner or extra people show up around dinner time. 😊

      That's a great idea! In the past I've put things on parchment paper, with a crease down the middle and then dumped it in. I don't have any parchment paper right now, and didn't think of using paper towels. I'll have to try that in the future! It does seem like you'd have to have multiple paper towels since the tray is bigger than a paper towel, but I'll definitely be experimenting with this.

    Why some people blanch them before and others don't? What difference does it make in the final result?

    • @StockingMyPantry
      @StockingMyPantry  Před 3 lety +2

      Great question. Sometimes if you don't blanch, it can impact the color. For instance, when I didn't blanch carrots, they turned kind of white. I've never tried blanching onions, so can't comment on that one. There's a great book by Tammy Ganglof (sp?) on dehydrating that advises when to blanch and when not to blanch. It also has a lot of great info, so it's worth checking out.

    • @Mass.Effect
      @Mass.Effect Před 2 lety

      A quick blanch will help reduce the strong onion odor during dehydrating! Much lower odor because blanching helps remove the gas in the onion responsible for the strong smell!!!
