- A cozy, veggie-packed broccoli cheddar soup recipe for a chilly spring day!
I don't know if anything makes me feel more warm and fuzzy than a good bowl of soup or chowder!! This recipe is super easy to make and incredibly nutritious. It's such a great way to add more veggies into your diet. If you like this recipe or plan on making it, let me know!
The other thing I love about soup is it's almost impossible to mess up basically just throw everything together in a pot and it'll probably turn out great haha
Ingredients:
1 medium onion, diced
2 carrots, peeled and diced
2-3 heads of broccoli, finely diced
1/4 ghee (or butter)
1/4 flour of your choice (I use an ancient grain called spelt!)
2 cups Chicken or Turkey bone broth (important for extra collagen / protein 💪🏻)
1 cup milk
1 cup cream
1 block or 2 cups of cheddar cheese
Salt, pepper, ground mustard, paprika (all to your liking but I probably used about 1/2 tsp for each)
Also as a general note, I recommend buying organic, non-GMO produce and grass-fed, organic dairy products whenever possible!
Enjoy :)

Ingredients:
Butter or ghee
Onion
Carrots
Flour
Vegetable broth
Heavy cream or half & half
Salt, pepper, dried mustard
Broccoli
Cheddar cheese
Instructions:
I don’t really use exact measurements, but chop the onion and sauté in butter/ghee until golden. Add chopped carrots. Add more butter/ghee and flour-cook for a few minutes to form a roux. Add broth and heavy cream. Add spices to your taste. Add the broccoli! Cook until all vegetables are soft and then stir in your cheddar cheese! Freshly grated is best so that it melts properly :)
Enjoy and let me know if you try it!!
Is the butter/ghee in like the condiments aisle at the store? Never seen that before
@@parisn6624 yes! it is clarified butter that is shelf stable so you will usually find it near the oils in a grocery store :)
That’s one of my favs.
Thanks
What kind of flour????
Love this soup. Here in Canada 🇨🇦 we have Tim Hortons and they have Broccoli 🥦 soup on their menu. Since having it, I became a fan and frequently been ordering it so I went and made my own every once in a while 😊
That’s awesome! I’ve never tried Tim Hortons but plan on visiting Canada sometime this year, so I’ll have to check it out when I’m there ☺️
@@justlifewithleahI never tried it either, and since Tim Hortons is on the boycott list, I'll probably never will. But thank to you, now I can! 🙏🏻
@@arimoto3007 wait why is Tim Hortons on the boycott list?! I am not aware of this 🙊
@@justlifewithleah Because it was bought by the same Burger King owner a long time ago! 😭💔
@@arimoto3007 no way!! I did not know that
I hopped off the plane at LAX with a dream and my cardigan
Made the soup by eye because I didn’t notice the recipe, but still this is SOO GOOD!! And simple so this is now my fav recipe
Yay!! I love soup for exactly that reason-you can measure with your heart and it still usually turns out great haha 🫶🏻 so glad you enjoyed it!
This looks absolutely delicious! I'll be making it real soon. Only thing I don't have in my pantry is dry mustard.
I hope it turns out great for you!! I will say the dry mustard makes it that much better but it would still be pretty good without it :) happy cooking!
I made this and it turned out really good and I also cut the broccoli 🥦 into bigger chunks ❤
Yay!!! Im so glad you enjoyed it! ✨
Love how simple and straight to the point this is...keep up the great work😊😊😊
thank you so much!!
Exactly what I do when I make mine ..try a dash of cinnamon or nutmeg yes really wakes it up
Oh yum! I’ve never tried that but definitely will!! Great tip.
Just made it!!! So exciting!!! Love it so much!! ♥️♥️

if you put the measurement in text , people can just pause the video for the things they need most like how much flour to use
At least you have put the name of ingredients!
easy cheesy soup :)
yes! I love how easy it is!
This looks soooo good!!! Too bad I can’t afford anything asssssssss the savior of heaven y’all forgot about.🤣🤣🤣
That looks so good, that is my favorite soup❤❤❤❤😊
Thank you! It’s one of my favorites too :)
Mmmmmm yes
GÖRÜMMCEEE
Seasonings are your friends. Don't be scared to use them
Haha no fear here! What would you add in addition to what I did? :)
Lol bro you don’t need to season every thing to death a little salt and pepper go a long way without getting too cute
Can you use milk instead of heavy cream?
You can! It just won’t be quite as rich and creamy but it’ll still be good 💛
Cook it all in chicken broth first
Then add cheddar soup (how my mom taught me)
That sounds like a great way to do it, too!
Yamy yamy,
Kindly can put the ingredients
Yes!! I added it to this thread as a pinned comment 🤍
ok, you just wanted to show off that carrot peeler
Hahahaha I really do love it 😂
@@justlifewithleahI want one!
Pero no dicen que cantidad de las cosas
Calculale depende cuantas personas
no garlic?😬 still looks yummy
I have an intolerance to garlic unfortunately so I keep it out of almost everything I make but you could definitely add some! I’m sure it would be delicious!
@@justlifewithleah Still looks great! 😋, I bookmarked this recipe for a rainy day
Can you use frozen broccoli?
You could but I usually don’t because it tends to be a mushier texture than how I prefer it 💛
Someone tell me whyyy every time I try to make this creamy soup no matter what I do it comes out so thin! It never gets thick, I do exactly as this video but mine is never thick, what am I doing wrong???
The most important part for thickness is the roux! Try adding more flour. I usually do about 1/4 cup but you could possibly add up to a 1/2 cup for this size recipe. You’ll need to add more butter as well. Make sure you cook flour + butter mixture until thick and almost dough-like, then add liquid very slowly to incorporate and let simmer as you stir until desired thickness. Let me know if that helps 💛
Thank you I’ll do more flour next time and see if that helps 🙂
Which flour????
You can use anything really but typically this would be made with all purpose wheat flour!
Which broth u used?
I usually use vegetable broth but you could probably also use chicken or turkey broth as well!
Nummy
💖
I guess you don't like to use any seasonings for your food?
I just like salt, pepper, and mustard powder in this recipe :) you could always add whatever you’d like though!
@@justlifewithleah Everybody so creative… don’t bring this to a black cookout
Vegetable broth from box and tons of cream are healthy? 😂 Just because ut Has vegetables doesnt make it healthy 😂
Better than something that has no vegetables :) for a less caloric version you could skip the cream altogether and replace with skim milk! You could also make vegetable broth from scratch for your recipe or even replace it with an organic bone broth for higher protein 💛
Start with learning how to use the chef’s knife first
Thank you so much for your feedback! Do you have a recommendation of a tutorial that would be up to your standards?
😂 I wonder how the human race has managed to feed itself and continues to do so successfully without knowing how to use a chef’s knife🙄
Wtf is this chunky sauce?😂
soup
You not swo😢nothing how to prepared
all ingredients and instructions are pinned in the first comment :) hope that helps!
