    This was a really I impressive demonstration of bunching a very expensive blue tuna. As a cook and semi-trained butcher, it was very impressive to see how little loss they had in dividing the tuna. My guess is between 10-20% loss which is phenomenal for butchering any animal or fish. Team is inspiring.

      Different countries, different cultures, cuisines and traditions. In your country I saw pagpag is a cultural food, while in Japan it is sashimi.

      @@bonhamcarter4488 eating 'pagpag' (unsold foods especially fried chicken disposed of by food chains) was never a habit or culture in our country but scavengers do, i admit, and is being frowned upon and discouraged.
      'Kinilaw' or putting vinegar on freshly-caught fish is a far cry equivalent to sashimi, a delicacy sacred to the Japanese. Peace brother.

    I can’t believe how fascinating this is to watch! A true master at his craft! Btw those fish are humongous!!! I don’t think until I watched a show on tv how big they were. I thought or assumed they were just normal sizes like cod or mackerel but when I saw them hauling these monsters I was astounded!!

      Nor only big but expensive asf! One video I saw detailed what goes into processing these behemoths when they first arrive on land; it's a whole situation! Government officials have to certify the catch or whatever; they can't just butcher it and send it to market because of the enormous price tag; millions of dollars enormous, so I appreciate the care that goes into breaking them down and procuring the meat; truly an artform

      @@Robin-wk8uf there's sushi and then there's sashimi. The concept is the same, but the execution is different. Sushi is fish prepared in sticky rice and seaweed, sashimi is just raw fish fillets you eat outright, I love sashimi with a nice lemon soy sauce dipping mixture.
      Edit: Fillets was not the right term, normally it is served as perfectly cut strips roughly a few millimeters thick.

      @@Robin-wk8uf I hope my description helped you understand the difference between the two. I was in the same boat at one point, thinking a Sashimi Platter, was the same as a Sushi Platter when I ordered it.
      Edit: ever since I at my sashimi platter, I've preferred it to sushi ever since.

      @@TheNumber1Gun_ Well, kind of right. Sushi just means a rice roll. Doesn't have to contain fish. You can use other stuff, like cooked shrimp and lobster, and it's still considered to be sushi. Or you can go crazy and stick a hotdog in a rice roll... still sushi.
