- Churros with Rabri
Makes enough to write happy diwali twice
- 2 cups water
- 4 tbsps unsalted butter
- 2 tbsps sugar
- 1 tbsp rose water (optional)
- 2 cinnamon sticks (optional)
- 1 tsp salt
- 2 tsp vanilla
- 2 cups flour
- 2 eggs
Cinnamon Cardamom Sugar:
- 1/2 cup sugar
- 1 tsp ground cinnamon
- 1 tsp freshly ground cardamom if you can!
Saffron Rabri:
- 4 cups whole milk
- Splash of rose water
- 2 tbsps sugar (or to taste)
- 6-8 saffron threads crushed
- 1 tsp freshly ground cardamom
- Chopped pistachios and slivered almonds

Agreed! Just spent a week at my friend's house eating tons of home cooked Sri Lankan food. I imagine it works really well in a mixed Spanish household because there are some similarities in how peppers and spices are used. Beautiful, fresh, nourishing food. I still have so much to learn.

When I hear sri Lankan, I lit up with joy, my dad is Sri Lankan, but I don't ever get to meet any of my relatives from there, celebrate any of their traditions, and I don't often get to try Sri Lankan food, so seeing this made me very happy, I love cooking especially when I get to cook things I've never got to cook before!
